【Easy Cake RECIPE】No Custard Powder Low Sugar Ma Lai Cake | ❤️无卡仕达粉也能做出马拉糕的味道? | 0失败!无人造色素!低糖!

Good Morning! I must say I am addicted to making Ma Lai Gou! Especially find the rising part when steaming so therapeutic!

So me, as your guinea pig, try out this recipe and luckily it turns out well. Phew! So here I share my recipe in video and written form for your better understanding. 

Q: How to achieve the yellow colour without custard powder? 
A: I did not use artificial colouring, I used turmeric powder. Just a toothpick size will do, as you don't want your cake to have nasi brayani taste. 

Q: Will the cake have the turmeric after taste?
A: No, as I only use a very little amount of turmeric powder, and the vanilla essence or extract will mask out the taste of turmeric. 


早上好!我又再做马拉糕了!不只是为了喜欢吃,也喜欢那蒸的时候糕慢慢发起来的视觉享受!很疗愈的,相信我!
脸书有人反应,这阻断期间很难买到卡仕达粉(custard powder),所以我就想出了这个方法。自己先做白老鼠,看一看是否成功。好彩!成功了!所以在此用影片和文字分享,让你更了解情况。

Q:没有卡仕达粉,如何取得马拉糕的黄色效果?
A:我没有用人造色素,只用了黄姜粉。只需要牙签般的分量就够了。太多的话,你的马拉糕会变成黄姜饭!

Q:加了黄姜粉,马拉糕会有黄姜粉的余味吗?
A:不会的,因为只用那么一丁点,而且香精油的香味会盖过黄姜粉的味道,所以放心。

Ingredients成份:
A:
1 egg
1鸡蛋
5g water
5克清水
30g sugar
30克砂糖
All Mix well
搅拌均匀

B:
40g Self Raising Flour
40克自发粉
7g Milk Powder
7克奶粉
3g Corn Flour
3克玉米粉
Toothpick size turmeric powder(for colouring)
少许黄姜粉(调色)
(Sieve through all flour)
过筛

A&B Mix well
成分A和B搅拌至无粉状
Add 1/2 tsp vanilla Essence/extract
加1/2茶匙香精油
Rest for 15 minutes
醒面15分钟
Add 10g neutral flavour oil
加10克食油(我用葡萄籽油)
Rest for another 15 minutes
再醒面15分钟

In the meantime, coat moulds with oil
等待期间为模具上油
Pour mixture to moulds (pour to the brim)
倒液体入模具(倒到几乎满)
Steam 10 minutes on high heat
大火蒸10分钟

The smell & taste is quite close to my previous recipe, with hint of vanilla scent
味道和口感和我之前做的马拉糕有像,还带有一丝精油香

【Easy No Oven Cake RECIPE】Low Sugar Pandan Steam Cake(Huat Kueh) | ❤️低糖低油松软班兰发糕| 隔天还松软绵密

Do try this recipe that does not required yeast, eno, yield Low sugar Little oil Pandan Huat Kueh. 
Best part is next day without reheat, still soft, light and moist 😋👍
不如试一试这个无需酵母,没用以罗,也可做出“发发”的班兰味发糕!最特别的是隔天不用蒸,还是松软不硬!

Yield 5 small cakes 
可制作5个小发糕

Ingredients成份:
A:
50g sugar
50克砂糖
90g hot water
90克热水
Stir till sugar dissolve
搅至糖溶化 

B:
10g plain flour or All Purpose Flour
10克普通面粉
10g cake flour 
10克蛋糕粉/低筋面粉
70g Self Raising Flour
70克自发粉

C:
1/2 Tsp baking powder (Video show 1 Tsp - Typo Error)
1/2 茶匙泡打粉 (视频显示1茶匙是因打字错误)
Add 1 Tsp water 
加1茶匙水
(Note:You can add baking powder directly to B too, won't affect the effect 你也可直接加泡打粉入B,不影响效果和口感)

Method:
  1. Add sugar water(A) to flour mixture(B) 加糖水入混合粉
  2. Add 1/2 tsp neutral flavour oil 加1/2茶匙食油(我用葡萄籽油)
  3. Add baking powder water(C) 加泡打粉水
  4. .(Optional) scoop out 3 spoonful mixture(随意)先取3汤匙粉浆出来
  5. Add 5 drop Pandan emulco to mixture 加5滴班兰精油到粉浆
  6. Preheat cups for 5 minutes 先给模具预热约5分钟
  7. Line with cupcake liners 放上纸杯
  8. Fill cups to 90% full  倒入液体至9分满
  9. Add 1 spoonful plain mixture 加1汤匙无色粉浆
  10. Steam on high heat  for 15 minutes 大火蒸15分钟
Taste good & not too sweet!
口感绵密又不太甜

【Easy Cake RECIPE】Low Sugar No BS Milo Lava Cake | ❤️低糖美禄溶岩蛋糕| 没有巧克力的巧克力蛋糕 |记录失败原因

This Milo Lava cake does not require Baking Soda, No baking powder, only 5 ingredients and 5 minutes. But it is also prompt to failure. No lava, only cake.
After some trial and error, I managed to steam some sucessful work. And here I shared my findings,and 2 versions.
这美禄熔岩蛋糕很容易做,无苏打粉、无泡打粉,只需5种材料,只需5分钟。可是它却不容易成功,成品没有熔岩,只有蛋糕。
经过几次的尝试之后,我终于得到了梦寐以求的成果。在此分享两个版本。

Ingredient成份: 
A:
30g Milo powder
30克美禄粉
1/2 or 1 tbsp hot water(depends on the result you want) 
1/2或1汤匙热水(视你要取得的效果)
1 egg
1粒蛋
1 tbsp caster sugar 
1汤匙白糖
20g plain flour 
20克面粉

B:20g melted butter
20克牛油(溶化)

Method做法:
  1. All ingredients AMix well. 全部搅拌至无粉状
  2. Add B:melted butter  加液态牛油
  3. Grease moulds(I use silicon moulds) and pour in mixture . 给模具涂油, 倒入液体
  4. Steam on medium high heat for 5 minutes. 中大火蒸5分钟
  5. Before serve, Sprinkle with Milo powder. 吃之前可洒上美禄粉点缀
Version 1:
Key point: Milo+1/2 tbsp water, Med high heat 5 min
重点:美禄+1/2汤匙水,中大火蒸5分钟
Version 2:
Key point: Milo+1 tbsp water, Med heat 5 min
重点:美禄+1汤匙水,中火蒸5分钟

【Easy Cake RECIPE】Low Sugar Old School Ma Lai Gou | ❤️还原古早味马拉糕的味道| 0失败低糖中式古早糕点

参考食谱后用家里有限的食材制作。可做4个小型马拉糕。Taste just as good & not too sweet!正是我熟悉的古早味!而且不甜腻!

Today I made this again and realised I actually added 5g water to this recipe that I have totally forgotten when writing this recipe! 
For those who have tried this recipe and want it softer and rise better, do add 5g water to the egg. I have updated my video recipe and written recipe. 

P.S. If you are happy with the texture of my earlier recipe then you can omit the water. Sorry for any inconvenience caused. 


Ingredients 成份:
A:(mix)
1 egg
1鸡蛋
5g water
5克清水
33g sugar
33克砂糖

B:
40g Self Raising Flour
40克自发粉
6g Custard Powder
6克吉士粉
3g Corn Flour
3克玉米粉
(Sieve through all flour)
过筛

A+ B Mix well
搅拌至无粉状
Rest for 15 minutes
醒面15分钟

Add 11g grapeseed oil
加11克葡萄籽油
Rest for 15 minutes again
再醒面15分钟

coat moulds with oil
等待期间为模具上油
Pour mixture to moulds
倒液体入模具
(Optional) Top with black sesame seeds
(可加)黑芝麻点缀
Steam 9 minutes on high heat
大火蒸9分钟

Ingredients成分:
10-12 fresh scallops
10-12个带子
4 cloves garlic
4个蒜瓣

B:
1 pkt glass noodle
1包冬粉
Wash & pat dry
清洗后用厨房纸拍干
Soak glass noodle till soft(sieve)
泡软冬粉(过筛)

Seasoning调味料:
1 tbsp soy sauce
1汤匙酱青
1/4 tsp salt
1/4茶匙盐
1/2 tbsp Hua Diao Wine or Shao Xing Wine
1/2汤匙花雕酒或绍兴酒
some pepper
少许胡椒粉

Method做法
1. Heat wok add 1 spoonful of butter
    1勺牛油入锅中
2. Add scallops & cook till just cooked
    加带子煮至刚熟
3. Place scallops on glass noodle
    冬粉上放带子
4. Add some oil on same wok
    加少许油在锅中(不用洗锅)
5  Add mince garlic
   加蒜蓉
6. Add 1 tbsp soy sauce
    加1汤匙酱青
7. Add 1/2 tbsp Hua Diao Wine or Shao Xing Wine
    加1/2汤匙花雕酒或绍兴酒
8. Add 1/4 tsp salt
    加1/4茶匙盐
9. Add some pepper
    加少许胡椒粉
10. Add sauce to scallops & glass noodle.  
      淋酱汁在带子和冬粉上
11. Steam for 10 min on medium heat
      中火蒸10分钟

Homecooked Nasi Lemak Recipe:

Add 2 cups of rice to rice cooker 
饭锅加两杯米
Add 1 cup water first as later need to add coconut milk
先加1杯水,后面还需要加椰奶
Add 2 stalks Pandan leaves
加两根班兰叶
Add coconut milk to 2 cup marking
加椰奶至2杯的刻度
Add 1 tsp salt
加1茶匙盐
Press "cook"

气炸食材Air Fried Ingredients:

Silver Fish 银鱼:Pat dry silver fish after washed
银鱼洗后拍干
Spray some oil
喷少许油
Set 150 deg 30 minutes (Toss in between)
调150度30分钟 (中间翻一翻)

Air fry crispy Luncheon Meat 气炸午餐肉:
Set 180 deg 10 min, flip over 5 min
调180度10分钟后翻面再5分钟
