【Eng Sub】Oreo Coffee Muffins |X’mas Special |Less Oil ❤️ 奥利奥饼干咖啡玛芬蛋糕 | 无需打发|少油简单 |圣诞特辑 @随食慢活FoodiEat


These muffins give us double sensation: spongy cake and crunchy cookies 

这玛芬蛋糕给你两种口感:松软的蛋糕与酥脆的饼干


奥利奥饼干咖啡玛芬蛋糕

Less Oil Oreo Coffee Muffins Recipe by 随食慢活FoodiEat

(Yield 7 big muffins, 可制成7份)


Ingredients 材料:

A:

1 - 2 tbsp instant coffee 即溶咖啡粉

1/2 cup(100ml) hot milk 热牛奶

80g sugar 细砂糖


1 egg 鸡蛋

1/4 cup (50ml) neutral flavoured oil (I used rice bran oil 无味食用油(我用米糠油)

160g plain flour or all purpose flour 普通面粉

1/2 tsp baking powder 泡打粉

1/4 tsp baking soda 小苏打

4 Oreo cookies 奥利奥饼干


Method做法:

1. Mix A ingredients and stir till sugar melt A材料混合并搅至糖溶解 

2. Add egg and oil, mix well 加蛋和油,搅拌均匀

3. All flour sieve through 粉类过筛

4. mix dry and wet ingredients 混合干湿材料

5. fill cup to 80% full 加粉浆至8分满

6. put Oreo cookies in plastic bag for easy mashing 放饼干入袋子里方便打碎

7. break into big pieces 掰成数块

8. top with Oreo cookies 奥利奥饼干放上面

9. bake in 170 degree preheated oven for 20 minutes 放入170度预热烤箱烤20分钟


Note: taste nice and soft the next few days (reheat before eat, oreo will remain crunchy) 

隔天吃一样松软可口(吃前烤热饼干会更脆)
