* Simple ingredients 简单材料

* Less sugar 少糖

(Yield 50s cookies, depend on size/可制成50多个饼干,视大小)

材料Ingredients:

82g 砂糖 sugar 

1 鸡蛋 Egg

100g 食用油 Cooking Oil 

250g 蛋糕粉 Cake Flour

1 tsp 小苏打 Baking Soda

50g 核桃Walnut 

(可加)黑芝麻 (optional) add black sesame 

蛋液(鸡蛋)Egg Wash (1 Egg)


做法Method:

1. 核桃压成碎粒, 压至你要的大小  

walnut press into pieces, till the right size you prefer 

2. 全部材料混合至成团 mix all ingredients till form dough

3. 搓成球状 form small balls

4. 用C形物体压形 Use C shape object to form pattern 

4. 放入180度预热烤箱烤25分钟 

bake in 180 degrees preheated oven for 25 minutes


Note:

1. 隔天或之后吃会更好吃 Taste better the next few days 

2. 核桃含omega 3及丰富抗氧化成分,可降坏胆固醇 

walnut is rich in antioxidants & source of omega 3, help lower cholesterol

Crunchy Green Pea Cookies 酥脆青豆饼 

(Recipe adapted from Here)


(Yileld 30 cookies 制成30份)

Ingredients 材料:

100g Green Pea Powder 青豆粉

100g Self Raising Flour 自发粉

45g icing sugar 糖粉

65g peanut oil or Neutral flavour oil 花生油(或无味食用油)

Egg Wash : 1 egg 

蛋液:1颗蛋


Method做法:

1. Sieve through Self Raising Flour & icing sugar 自发粉与糖粉过筛

2. Mix well with Green Pea Powder 与青豆粉搅拌均匀

3. make a well at Center 中间留一个洞

4. Add oil, mix well and form dough 加食用油,搅拌至成团

5. form balls and create pattern using stamp etc 搓成球状,用模具做花样

6. brush egg wash 刷上蛋液

7. bake in 170 degree preheated oven for 20 minutes 放入170度预热烤箱烤20分钟


Note: 

- Yield crunchy texture 酥脆的口感。

- taste better the next day 隔天吃更美味。

CNY Baking | Miss Piggy Almond Cookies 杏仁饼干

Now it's nearing CNY and I am also busy preparing many Chinese New Year goodies. Almond cookies is a must bake new year goodies for me. Coming year is the year of pig, so I decided to design my almond cookies into Miss Piggy.
(Method see video)



Ingredients:
35g grounded almond
50g plain flour
25g icing sugar
30g peanut oil
1/4 tsp vanilla essence
Almond slices as Topping and egg wash

Method:
1. Sift Plain flour and icing sugar. Add ground almond and mix well.
2. Add peanut oil and vanilla essence and mix till form dough.
3. Preheat oven at 180 degrees.
4. Roll dough into balls and flattened them.
5. Egg wash all of them.
5. Add a small piece of dough just slight below the face to form nose.
6. Use toothpick to add piggy nose hole.
7. Add almond slice to form piggy ears.
8. Bake in oven for 25 minutes.
9. Ready to serve when cool.

每一年的农历新年我都会自己烘焙,因为可以控制摄取的糖分、油份和盐分。这个杏仁饼干是我每年必做的新年饼干。
很快就要到猪年了,我于是灵机一动要做小猪猪造型的杏仁饼干。可爱吗?

Enjoy CNY buffet at PARKROYAL on Beach Road


从今天至3月5日,你就可以预订和享用农历新年大餐。PARKROYAL on Beach Road的Plaza Brasserie,特别在这段期间推出农历年自助餐,菜肴还非常配合羊年主题。


这个海南羊肉汤正是其中一个配合羊年主题的菜肴之一。海南人一定会喜欢这道非常传统也很道地的补身羊肉汤,就连海南人的美食家都对它赞不绝口。所以说,海南人到这里庆祝新年肯定更开心。


这个水果鱼生也配合主题,除了传统食材,还有各种水果如青芒果、哈密瓜、蜜桃等等。


多宝糯米饭,材料丰富,也很有饱足感。


喜欢这道八宝鸭,鸭肉不“材”,而且非常入味。


羊肉烧卖是另一道配合羊年主题的必吃食品。羊肉和猪肉的内陷,香滑而且无羊膻味。


迷你糙米球,包着猪肉馅,很弹牙可口。

Crystal Jade Palace Restaurant CNY feast

来临的农历年是羊年。为此,不少餐馆都非常应景,以羊为主题,让每个人都喜气“羊羊”。翡翠餐饮集团当中,最具代表性的,可说是位于义安城四楼的翡翠皇宫酒家(Crystal Jade Palace Restaurant)。这次要介绍的正是在翡翠皇宫酒家特别在羊年推出的年菜。


捞鱼生是每一桌必点必做的年菜。今年与其吃传统的捞鱼生,不如趁羊年吃一点不一样的。“黄金鲜果捞生”是非常应景,以水果为主的“捞起”。色彩鲜艳的食材,都是以水果如杨桃、雪梨、哈蜜瓜、芒果,加上脆芋条、花生、海蜇、黄尾鱼和芝麻等等。酱料也非常配合羊年主题,在酸梅酱中加了洋参须。

我很喜欢这道水果捞生,很鲜甜爽脆,也很开胃,像吃水果沙拉。如果想“打包”,也可以预定。每份$78.80/$128。


用10小时炖煮的“金牌鸡炖中鲍翅”,是鸡汤和鱼翅的完美结合,清甜暖胃。每份$52。


盆菜,已成为大家必吃的年菜之一。这锅“金装鲍鱼盆菜”里有多达18种食材,包括顶级10头鲍、鱼鳔、海参、猪脚、猪肉、烧鸭、蚝豉、竹笙、虾、发菜、干贝、冬菇、猪皮、芋头、豆皮、白菜、鱼饼和白萝卜。$298.90++/$488.80++

材料丰富又新鲜,让人想把全部的材料一网打尽。


配合羊年的“蒜片羊柳粒”,鲜嫩多汁,而且没有羊膻味。$40


好意头的菜肴--“发菜蚝豉鲜鲍片”。时价


“六六大寿”是这道面食的菜名。为什么?因为看似另一道捞起的面食,有六种材料:鲍鱼、烧鸭肉、叉烧、冬菇、干贝和灯笼椒,和淋上芝麻酱的冷面一起再“捞起”,肯定大发又大寿。$36.80


最后,别忘了甜品。这道配合羊年的“洋参炖香橙雪梨蜜”,清甜之余也有助消化。每人$6.50

AB #39: Yam Nian Gao 芋头年糕


I add Chilli sauce on top of yam Nian gao


Recently I was watching a HK cooking programme and come across this recipe. Promised my mom will cook for her during this CNY period and I did.

This is my first time making it. Maybe I did not add enough water, it was a bit hard and abit chewy, but still acceptable I hope.

Ingredients:
45gm tapioca flour
75gm rice flour
300gm yam
A handful of dried prawn
1 Chinese sausage (I use Taiwan sausage)
1 tsp salt
A pinch of pepper
A pinch of five spice powder(the prog did not ask for it but I want to give it a try)

Method:
1. Cut yam to small cube, steam for 30 min.
2. Mash yam with fork when it's hot. Set aside.
3. Mix both sift flour with yam till form like bread crumbs.
4. Add water till it form thick smooth paste. (should have add more)
5. Add dried prawn and sausage till well mixed.
6. Add salt, pepper and five spice powder till well mixed.
7. Pour into bowl (spread with oil), steam for 45 min till skewer come out clean.
8. Cut and serve hot or pan fried.

AB #39: baked Cod strips



Notice during the month of Jan , this CNY snack is very popular among many food bloggers. Am curious to try this out, so on the last day of snake year, I tried baking this, with reference from Ann's recipe. I used hundreds and thousands sprinkles instead of seaweed and sesame seeds, thinking the colorful sprinkle will attract the kids, but it looks like spiders, ha!

Ingredients:
1 pkt of cod strips
Thousands and hundreds sprinkles
Egg white

Method:
1. Take out Three cod strips tie a knot at the middle.
2. Dip into egg white before dip in thousands and hundred sprinkles, lay on baking tray (with baking paper).
3. Bake at 140C for 10-15 min. Let cool before put in air tight container.

AB #39: Homemade Bak Gwa


Gong Xi Fa Cai to all!

From Xmas to CNY, I have been so busy with work, spring cleaning and Baking CNY goodies that I hardly have time to update my post and even reply to some submission. Paiseh!

During this CNY , thanks to this topic and also the submission of Bak Gwa recipes, I got to know how to make Bak Gwa at home. With this, I not only save a lot of trouble queuing, save $$$, and also get to Bake our own Bak Gwa to serve guests.

I have tried recipes from Nasi Lemak lover, Sze Min and Cheah to see and taste the difference.

The first batch, I set my oven to 240C degree(according to some recipes), and ruin the whole batch, the batch turn dark and chao da(burnt), then I realized my oven is a simple oven with no grill function.

So the second time, I set 160C for 15 min then to 180C, and watch the item Closely, the second batch turned out ok. So I tried again using another recipe, and I realized I like the taste better and the result turned out well.

No offense, my liking as in the taste I like is from Cheah's recipe. The recipe asked for lesser ingredients yet the result turn out almost like the Bak Gwa we bought from outside. Thanks Cheah for the wonderful recipe(see below)

Mix all ingredients and leave overnight

Ingredients:
500 gm double minced pork
100 gm sugar (after many tries, I think half caster sugar n half brown sugar is best)
1 Tbsp light soya sauce
1/2 Tbsp Chinese cooking wine
2 Tbsp honey
3/4  Tbsp oil
1/2 tsp salt

Method:
1. In a large mixing bowl, mix all the ingredients, except the minced pork, stir till creamy.
2. Add in the minced pork, stir with a wooden spoon till gluey.
3. Cover with cling wrap and keep refrigerated overnight.
4. Spread the marinated meat on a parchment lined baking tray with a spatula, about 1/4 inch thick.
5. Bake in a preheated oven @ 160 deg.C for 15 to 20 mins.
6. Remove from the oven, cut into desired size, flip over and bake @180C for another 15 min.
7. As my oven no Grill function, I turn oven to top heat and bake for 5 min or less till the desired colour is attained.

Yam in red 红运(芋)当头


Every year, My sister will cook 罗汉斋(mixed vegetable) with red fermented beancurd(南乳) and my mom will always cook Braised lotus root with red fermented beancurd for me. So this CNY, I thought of using yam to cook with it. It is very easy to cook and it always taste good. I think the Chinese name is better and it's auspicious. This is the recipe:

Ingredient:
1 cube red fermented beancurd
1/3 yam (cut into chunks)
1 tsp garlic
1 cup chicken stock
100g mince meat
Sugar to taste (optional)

Method:
1. Heat pan with oil. Fried garlic to fragrant.
2. Add fermented beancurd cube and quickly smash it.
3. Add mince meat, cook and stir well.
4. Add yam and chicken stock, stir well. Lower heat and simmer till yam turn soft.
5. Sugar to taste. Ready to serve.

Yam Rice 好芋(预)头饭


恭喜发财 to all! This is my first post in Feb that is with CNY recipe (Sorry if I have bored you with my emotional post earlier).
I cooked this dish the day before CNY eve for our reunion dinner. I learnt this dish from ”吃饭皇帝大”. This is a very easy, delicious and definitely auspicious dish that can substitute for white rice especially during CNY. Why? In Chinese, yam is 芋头(yu tou), same pronunciation as 预头(luck), so pls enjoy and try at home before and after 15th day of CNY, wish you all year good luck.

Ingredient:
1 & 1/2 cup white rice
1/3 yam (cut to cubes)
2 tbs dried shrimp(chopped lightly)
1 tsp chopped garlic
1 Chinese sausage (lap chiong)(cut to cubes)
2 tbs rice wine
1 tbs dark soy sauce
1 tsp fish sauce
A pitch of pepper

Method:
1. Cook rice in rice cooker.
2. Heat pan/wok. Fried yam (without oil) till golden brown. Set aside.
3. Add oil. Fried chopped garlic and dried shrimp till fragrant.
4. Add sausage cubes and fry well.
5. Add rice wine and stir well.
6. Add dark soy sauce, fish sauce and pepper and stir well.
7. Lastly add yam cubes and stir well.
8. Pour all cooked ingredients into rice cooker and stir immediately into the hot rice. Stir well.
9. Cover cooker lid and continue to warm rice in "warm" mode. After 15 minutes, it's ready to serve.

Melt in your mouth Pandan German Cookies


I like everything pandan, be it pandan chiffon cake, pandan kaya, pandan kueh etc. Saw a few recipes on German cookies and want to feel the melt in your mouth sensation. Yet, I want to try adding pandan flavor to it. So I decide to modify this recipe to fit in the pandan.

Recipe Adapted from Happy home baking

Ingredients:
120g margarine (room temperature)
40g icing sugar (sifted)
1/2 tsp pandan paste
125g potato starch
80g top flour

Method:
1. Beat margarine and icing sugar till soft and fluffy.
2. Add in pandan paste and mixed well.
3. Sift in potato starch and top flour. Use spatula to mix well and form soft dough.
4. Roll dough into balls. Arrange on Lined baking pan and press lightly with a fork. (dip fork in water after each time to prevent dough From sticking To the fork)
5. Bake in preheated oven at 170 deg C For 15 min. (with my small oven I need to bake for 25 min)

Verdict: all my colleagues liked it! Not too sweet and it really has the melt in your mouth power. With the pandan flavor, it actually reminds me of pandan kueh bangkit! Maybe I can bake this cookies before CNY , and tell people it is kueh bangkit! ;p

Peanut Cookies


I always like to eat peanut cookies during CNY. And I always looking for one that's not too sweet nor hard. So since CNY is approaching, I decided to make my own. I'm a sucker for very easy and simple recipe. After searching for many recipes, I decided upon this one. I substitute plain flour with self raising flour so I omit baking powder and salt. And I choose peanut powder with no sugar added. Wella! My 1st attempt is a success! It turned out really nice and meet my requirement--melt in my mouth and not too sweet :)

(Recipe adopted from Cuisine Paradise)

Ingredient: (36-40 balls, depends on the size)
100g self raising flour
100g peanut powder
50g icing sugar
70-80g veg oil

Egg white as egg wash

Method:
1. Mix sieved self raising flour, icing sugar and peanut powder in a mixing bowl.
2. Add oil abit at a time, knead with hand, till dough bind together.
3. Roll to marble size and brush on egg wash.
4. Put in preheated oven at 170 degree C for 20-25 min till golden brown.
5. Let it cool on rack and ready to serve and store.

1st attempt: Kaya Tart


I always like kaya and want to make cupcake and cookie with kaya in it. While making pineapple tart,my pastry potion is more than pineapple filling so I substitute with kaya jam. You know what? It turned out quite well! Will make just kaya tart next time ;)
