我是咖哩角控,无咖哩不欢。但是,咖哩角大多是油炸的,不那么健康。偶然看到有个食谱(谢谢OH YL的食谱)是用烤的,做法也没有很困难,所以迫不及待要来试一试。这是我第一次做,从0开始做面皮和内陷,还算成功,虽然还有一些不完美,但却很有成就感。 I am a curry puff lover, but most curry puff are deep fried, not as healthy. Recently stumble upon a baked curry puff recipe (Thank you OH YL for the recipe) so decided to try out. This is my first time making curry puff from scratch, not perfect but feeling accomplished. * Baked not Deep Fried 烘烤而非油炸 * Less Sugar & Oil 少油少糖 * Flaky & Crispy Skin 外皮千层酥脆

Yield 13 pcs 可制成13 A : Filling 内馅: 2-3 Potatoes 马铃薯 (Wash & Peel 洗净削皮) 1/2 Onion 洋葱 1 Garlic clove 蒜头 1 Steamed Chicken Thigh 蒸鸡腿肉 (Optional) 2 Hard Boil Egg 熟蛋 B: Water Dough 水面皮: 1/2 tbsp(8g) Sugar 细砂糖 100g All Purpose Flour/Plain Flour 普通面粉 30g Cooking Oil 食用油 50g Water 清水 C: Oil Dough 酥油皮: 80g All Purpose Flour/Plain Flour 普通面粉 50g Butter 牛油 (room temperature 室温)

Seasoning 调味料

15g Chicken Curry Powder 鸡肉咖喱粉

1/2 tsp Salt 玫瑰盐

1-2 tsp Soy Sauce 酱青

1/4 tsp Mushroom Seasoning 冬菇粉

1/2 tsp Sugar 细砂糖

200ml Water 清水


A: Method 做法:

1. All ingredients Cut into cubes 全部材料切丁

2. Heat Pot with Oil 热锅倒油

3. Add garlic & onion 加蒜末和洋葱丁

4. Add Curry powder 加咖喱粉

5. Add Chicken cubes & potato cubes加鸡块和马铃薯丁

6. Add Seasoning  加调味料

7. Set Aside to cool 放凉备用


B: Method 做法:

1. Mix water and sugar 糖加水

2. Stir till sugar dissolve 搅至糖溶解

3. Add Cooking Oil 加食用油

4. Stir to emulsify 搅至乳化

5. Add flour in parts 分次加入面粉

6. Knead to form dough 搓成面团


C: Method 做法:

1. Add flour to butter in parts 分次加入面粉

2. Knead to form dough 搓成面团


Rest both dough for 30 minutes 

醒面30分钟


Assemble 组装:

1. 19g Water Dough水面皮 /13g Oil Dough 油酥皮

2. Wrap oil dough in water dough 油酥皮包入水面皮

3. Roll up twice 卷两回

4. Use hand or rolling pin to flatten 用手或擀面棍压平

5. use 9cm cutter to cut round shape 用的是9公分的圆形模具

6. Wrap Filling & Egg 包内馅和鸡蛋

7. Egg Wash - 1 Egg 刷蛋液

8. Bake in 190 degree preheated oven for 20-25 minutes 

放入190度预热烤箱烤20-25分钟

Morandi Trio Tone Purple Sweet Potato Beetroot Bread

That day after making Purple sweet potato powder (recipe here), eager to add the powder to my bread making process. 

This time challenge myself to do a trio tone bread by using the purple powder and beetroot powder. And I thought I will get nice purple and pink colour bread, but it turned out to become Morandi tone bread. Even though this is not what I expected, but no doubt it is a good surprise, bread with trendy colour! why not? 


那天做了紫薯粉(食谱:https://foodplayground.blogspot.com/2021/07/homemade-no-cook-natural-purple-sweet.html)后就很想用它来做面包。这次挑战自己做三色面包,原本想做有紫色和粉红色的梦幻面包,谁知道甜菜根出来的颜色会变成淡巧克力色。组成了现今时尚最流行的莫兰迪色!虽然不如预期,但未尝不是一个惊喜,让我发现了如何给面包“穿”上最流行的色彩,吃在嘴里也感到身上有莫名的“时尚感”。


* Natural Colouring 天然颜料 * Soft & Fluffy 松软拉丝 * No Whip Cream 无奶油

Yield 450g bread loaf 制成450克面包 Ingredients 材料:

A:

250g Bread Flour 高筋面粉 

1/2 tsp Salt 玫瑰盐

20g Sugar 细砂糖

120ml Warm Milk 温牛奶

3g Instant Yeast 速发酵母

60g Natural Plain Yogurt 天然原味优格

(Optional) 1/2 tsp Purple Yam Paste 

(可加)1/2茶匙紫薯香精

15g Butter 牛油


B: 

1/2 tsp homemade Purple Sweet Potato Powder 自制紫薯粉

1/4 tsp Beetroot Powder 甜菜根粉


Method 做法:

1. Mix all A ingredients 混合A材料

2. Knead using mixer,bread maker, by hand 

可用手、搅拌机或面包机揉面

3. Once reach window pane, can stop kneading

有出手套膜就可停止揉面

4. Divide Dough to 3 equal portion 面团分成三等份

5. Add & Mix in Purple Sweet Potato Powder & Beetroot Powder separately  

分别加自制紫薯粉和甜菜根粉

6. Proof for 1 hour 发酵约1小时

 7. After rolling and shaping, put dough in 450g bread tin , Proof for 1 hour 

擀面和放面团入450克面包模具后,再发酵约1小时

8. Bake in 160 degree preheated oven for 35 minutes 

放入160度预热烤箱烤35分钟


Tips: After 3 days, best to store in freezer 

小提醒:面包在室温下3天后,记得放冷冻以延长保存期。

最近煮了沙葛炒虾米,于是用它来当包子的内馅。最近也蒸了一些紫薯,就用紫薯泥来做包子。

- 沙葛是很好的维生素C来源;紫薯含抗氧化物,对身体健康有帮助。


Recently cooked Yam Bean with dried shrimps, so use it as Pau filling. Recently also steam some purple sweet potatoes, so just use it to make Pau. 

- Yam Bean is a good source of Vitamin C. 

- Purple sweet potato is a good source of antioxidant. 


* simple ingredients 简单材料

* less sugar & oil 少油少糖

(Yield 11-12 buns 可制成11-12个包)

Ingredients 材料:

175g Cake Flour 低筋面粉

+ 1/2 tsp Baking Powder 泡打粉

20g Sugar 细砂糖

1/2 tsp (2g) Vegetable Shortening 起酥油

1/2 tsp Instant Yeast 酵母粉

+ 90ml water 清水

Method 做法:

1. Mix all ingredients 混合全部材料

2. Knead using mixer,bread maker, by hand 

可用手、搅拌机或面包机揉面

3. Till soft & smooth 揉至柔软光滑

4. Rest for 15 minutes 醒面15分钟

5. Equally divided & form small balls 

等份后搓成小圆球

6. Wrap bun with filling 包上内馅

7. Put in pot to proof for 15-20 minutes 

放锅里发酵15-20分钟

8. Steam over medium high heat for 20 minutes 

开中大火蒸20分钟


小提醒 Note: 

- Can store in freezer if can't finish  冷冻可以保存更久

- It only Used very small amount of shortening (and we don’t eat pau everyday)

 这食谱只用少量起酥油,平均每个包约0.16g 

- Each Pau about 1.6g sugar 

平均每个包约1·6克糖

自制天然紫薯粉
Homemade Natural Purple Sweet Potato Powder

Ingredient 材料:
Purple Sweet Potatoes 紫薯(份量随意)

Method 做法: 
1. Wash away dirt on sweet potato skin 洗去外皮脏污
2. Peel skin 去皮
3. Cut away front & back 头尾去掉
4. Slice evenly 均匀切片
5. Place purple sweet potato on tray 放紫薯在烤盘上
6. Place in Food Dehydrator or Oven 放入食物烘干机或烤箱
7. 70 degree 8 hours 70 8小时
8. Check if it become Crispy Purple Sweet Potato Chips 检查是否变酥脆紫薯片
9. Put chips in blender 放薯片入搅拌杯里
10. Blend into powder 搅成粉
11. Sieve through 过筛

Note: This is a Multi-purpose powder(Bake, Cook, Decorate etc) & can store for half a year 
这天然食用紫薯粉不但多用途(可煮、可烘、可装饰等等),还能存放达半年

* Simple Ingredients 简单材料

* Less Oil 少油

* Multi-Purpose 多用途


Ingredients 材料:

600g Yam Bean 沙葛

1 Small Carrot 小型红萝卜

20g Dried Mushroom 冬菇

20g Dried Shrimp 虾米

2 clove garlic 蒜头


Seasoning调味料:

1 tbsp Soy Sauce 生抽

1 tsp Sugar 细砂糖

Some pepper 少许胡椒粉

Mushroom Seasoning & Salt to taste 

少许冬菇粉和盐调味


Method做法:

1. Remove Yam Bean Skin 沙葛去皮

2. Rinse Mushroom & Soak in hot water (Set aside)

冬菇冲洗后用热水泡发(备用)

3. Rinse dried shrimp & Soak in hot water (Set aside)

虾米冲洗后用热水泡发(备用)

4. Julienne Yam Bean & Carrot 沙葛红萝卜切丝

5. Add some oil to wok 锅中加少许油

6. Add minced garlic 加蒜末

7. Add dried shrimp 加虾米爆香

8. Add mushroom (Slice) and Yam Bean & carrot  加沙葛红萝卜和冬菇(切条)

9. Add dried shrimp & mushroom water (about 1 bowl) 

加冬菇水和虾米水(约碗)

10. Add seasoning 加调味料
