No Egg No Milk No Butter Low Sugar Almond Cake | No Mixer Recipe|❤️ 无蛋无奶无牛油,无打发全素低糖杏仁蛋糕 【Eng Sub】 @随食慢活FoodiEat  谢谢粉丝Sylw 的提问,给我机会做这实验,用无蛋奶全素巧克力蛋糕(食谱影片:https://www.youtube.com/watch?v=QgwUAH9URPw)为基底做出全素无打发的杏仁蛋糕。
* No Egg No Milk No Butter 无蛋无奶无牛油 * Less Sugar 少糖 * No Mixer 无需打发 * Moist & Soft Texture 湿润松软质感 (For 5-8 person, 5-8人份)
材料 Ingredients:
A: 175g 蛋糕粉 Cake Flour 50g 杏仁粉 Grounded Almond 1 tsp 泡打粉Baking Powder 100g 细砂糖 Sugar
B: 6 Tbsp 米糠油 Rice Bran Oil 1 tsp 香草精 Vanilla Essence 1 Cup 清水 Water
做法 Method:
1. 蛋糕粉过筛 Cake Flour Sieve Through
2. 材料A拌匀 Ingredients A mix well 
3. 中间留个洞 make a well at centre 
4. 加入材料B并拌匀 Add in Ingredients B and mix well 
5. 把粉浆倒入模具里  Pour mixture to mould
6. 震几下去除气泡 tap to release air bubbles
7. 放入170度预热烤箱烤50分钟 

bake in 170 degree preheated oven for 50 minutes 

8. 架上放凉 Keep cool on rack 


Note:

我是用8cm x 22cm 模具(或6x6x3” 模具)

元宵节快乐!元宵节快乐!这是我们新年必吃的一道菜—阿参虾,是跟家婆学的。简单快速又好吃。 Last day of CNY. This is our must have dish during CNY. Only 2 ingredients and less than 10 minute to cook. Learnt it from my late MIL. * 2 ingredients 两种材料 * No seasoning 无调味料 * 8 minutes recipe 8分钟完成

材料 Ingredients:
14 中型虾 Medium Size Prawn 1/4包阿参膏 Assam Paste
(可加)香菜点缀 (Optional) garnish with coriander 

做法 Method:

1. 少许油加热 heat frying pan with oil 

2. 加虾,煎到变色 fry till just cooked

3. 加阿参膏 add Assam paste 

4. 拌炒均匀 Mix and fry

5. 加少许水 add a bit of water 

6. 即可上桌 ready to serve 

7.香菜点缀 garnish with coriander

Fried Sugarless Nian Gao with Egg + Healthy Nian Gao French Toast

新年前第一次做无糖年糕(食谱看这里), 原本担心放进冰箱后会不会发霉或是不能变硬,也担心味道会不会不像年糕。

今天从冰箱拿出来准备“验货”,不但没有发霉还像市售年糕一样变硬。切的时候也不会过硬,比传统年糕容易切。

先用来煎蛋看看质感,发现遇热后像普通年糕一样变软了。味道也像极市售年糕,而且不会过甜,非常开心。

家里还有一些面包,所以决定做法式吐司夹年糕。由于这无糖年糕不是过甜,所以吃的时候适合加些枫糖浆。


(For 2 person, 二人份)

成分Ingredients:

100g 年糕 Nian Gao 

2鸡蛋Eggs 

少许盐 pinch of salt 

4 面包 bread 

(可加)芝士

(optional) Add Cheese 


蛋煎年糕 Fried Sugarless Nian Gao with Egg

做法 Method:

1. 年糕切成块 Nian Gao cut into pieces

2. 蛋打散放在盘中,加少许盐 Lightly beat egg and add salt

3. 年糕放入蛋液 Add nian gao to egg mixture

4.  锅中加点油 Add some oil on pan 

5. 放年糕入锅 Put Nian Gao on pan 

6. 煎至年糕变软和金黄 fry till Nian Gao turn soft and golden brown 


年糕西多士 Healthy Nian Gao French Toast

做法 Method:

1. 用剩下的蛋液裹面包 dip bread in remaining egg mixture

2. 煎至两面金黄 pan fry till both sides golden brown 

3. 放上刚才煎好的年糕 place fried Nian Gao on top

4. (可加)芝士 (optional) Add Cheese 

5. (可加)吃前加少许枫糖浆 drizzle some maple syrup before serve 


Note: 

1. 口感和味道居然跟市售年糕一样!而且没那么甜!

texture, colour and taste is just like store bought Nian Gao , and less sweet! 

2. 喜欢只放年糕的西多士,可以吃到年糕的绵密和些许甜味

I like with nian Gao filling, chewy and with a hint of sweetness 

3. 加一点枫糖浆在有芝士的西多士也不错

drizzle maple syrup on French toast with cheese is good too

* Simple ingredients 简单材料

* Less sugar 少糖

* Easy Recipe 简单食谱

* Crunchy texture 酥脆口感

(Yield 50s cookies, depend on size/可制成50多个饼干,视大小)

材料Ingredients:

82g 砂糖 sugar 

1 鸡蛋 Egg

100g 食用油 Cooking Oil 

250g 蛋糕粉 Cake Flour

1 tsp 小苏打 Baking Soda

50g 核桃Walnut 

(可加)黑芝麻 (optional) add black sesame 

蛋液(鸡蛋)Egg Wash (1 Egg)


做法Method:

1. 核桃压成碎粒, 压至你要的大小  

walnut press into pieces, till the right size you prefer 

2. 全部材料混合至成团 mix all ingredients till form dough

3. 搓成球状 form small balls

4. 用C形物体压形 Use C shape object to form pattern 

4. 放入180度预热烤箱烤25分钟 

bake in 180 degrees preheated oven for 25 minutes


Note:

1. 隔天或之后吃会更好吃 Taste better the next few days 

2. 核桃含omega 3及丰富抗氧化成分,可降坏胆固醇 

walnut is rich in antioxidants & source of omega 3, help lower cholesterol

【Eng Sub】Cow Print Soft Bread | CNY Special |❤️牛纹松软面包| 新年特辑|简单做法


【Eng Sub】Cow Print Soft Bread | CNY Special |❤️牛纹松软面包| 新年特辑|简单做法 @随食慢活FoodiEat


今年的生肖年是牛年,所以试做牛纹面包(手法不熟练,请包涵)

This year zodiac animal is Ox, so trying to bake cow print bread for the first time (pardon my skill)


(Yield 1 loaf, adapted recipe from here)


Ingredients 材料:

200g 温牛奶 (40-45度)warm milk 

3g 酵母 yeast 

110g 全麦粉 wholemeal Flour

190g 面包粉 bread Flour 

 (如没全麦粉,可用300g面包粉 if no wholemeal flour, can just use 300g bread flour) 

3g 盐 Salt 

35g 细砂糖 sugar 

15g 牛油 butter 

1 tbsp (15g) 黑可可粉 dark chocolate powder 


Method做法:

1. 酵母加进温牛奶 Add yeast to warm milk 

2. 加少许糖入牛奶激活酵母 add some sugar to activate yeast 

3. 干湿材料混合并揉面 mix wet and dry ingredients and knead 

4. 发酵两小时 proof for 2 hours 

5. 面团分成两半 divide dough into 2 

6. 加黑可可粉入其一 add chocolate powder to 1 portion 

7. 再发酵1小时 proof for 1 hour 

8. 分成几份 divide into few portions  

9. 把黑面团放在白面团内,揉成长条  wrap dark portion with white portion and roll 

10. 再发酵1小时 proof for 1 hour 

11. 放入170度预热烤箱烤30分钟  bake in 170 degree preheated oven for 30 minutes


Note: 全麦面包不耐放,三天内最好吃完。吃不完最好冷藏。wholemeal bread can't keep for more than 3 days, after 3 days best to store in freezer
