【Easy Nonya Cake Recipe】Less Sweet Harum Manis - Gula Melaka Banana Cake...


低糖香蕉椰糖蒸糕

Less Sweet Harum Manis

* Nonya Steam Cake 娘惹蒸糕

Harum stands for fragrant, Manis stands for sweet. This fragrant and sweet Gula Melaka Banana Steam Cake is one of my favourite old school cake. So made this less sweet version.


Yield 15 Pieces

Ingredients 材料:

A

100g gula Melaka 椰糖

2 pandan leave 班兰叶

175g Water 清水


B

1 Egg 鸡蛋

45g caster sugar 细砂糖


C

175g Cake Flour 低筋面粉

1/4 tsp Baking Soda 小苏打

+ 1/2 tsp Baking Powder 泡打粉


D

1/2 tsp vanilla essence 香草精

25g melted butter 溶化牛油


Method:

  1. Cook A to dissolve 
  2. Beat B till pale and smooth
  3. Sift all C flour 
  4. Add C to B in parts 
  5. Add Sifted Gula Melaka mixture in parts  
  6. Add D and mix well 
  7. Pour mixture to greased moulds 
  8. Top with frozen Banana slice 
  9. Steam on medium heat for 15 minutes 
 做法:
1. 煮A至椰糖溶化
2.  打B至发白柔滑
3. C面粉过筛
4. 分次加面粉入B
5. 分次加椰糖水
6. D拌匀
7. 倒面糊入涂了油的模具
8. 用冷冻香蕉片点缀
9. 中火蒸15分钟

【Soup Recipe】黑黑真补身!Black Bean Black Chicken Soup | 低卡低胆固醇的黑豆乌鸡汤

Black chicken has lower cholesterol and calorie compare to normal chicken.

乌鸡比一般鸡的胆固醇和卡路里都来得低。尤其适合要减肥的你我!



Black Bean Black Chicken Soup

黑豆乌鸡汤

Ingredients 材料:

1/2 Black Chicken 乌鸡

+ 90g Black Bean 黑豆

1 Dried Cuttlefishwashed) 

 鱿鱼干(洗净)

1 Honey Dates 蜜枣

+ 3 Red Dates 红枣

750ml Water 清水


Method:

1. Blanch chicken in room temperature water 

Tips: Add ginger slice (to remove bad odour)

2. Once boiled, off heat and remove chicken 

3. Add all ingredients to pot 

4. Double boil for 3 hours 

5. Salt & Pepper to taste


做法: 

1. 用室温水川烫乌鸡, 加姜片去腥

2. 水滚后就可取出乌鸡

3. 加全部材料入锅

4. 慢炖3小时

5. 盐和胡椒粉调味

【Thermal Pot Recipe】超下饭的Braised Pork with Knotted Beancurd Sheets | 懒人做法...


Braised Pork with 

Knotted Beancurd Sheets

豆结焖猪肉

* Not oily 不油腻

* Thermal Pot Recipe 焖烧做法:省电

Ingredients 材料: 

1 pkt Knotted Beancurd Sheets 豆结

250g pork loin 肉头

2 garlic clove 蒜头

2 ginger slice 姜片


Seasoning 调味料: 

1 tbsp Shao Xin Wine 绍兴酒

600ml water 清水

2 tbsp Soy Sauce 生抽

1 tsp Five Spice Powder 五香粉

2 Rock Sugar 冰糖

1/2 tbsp Dark Soy Sauce 黑酱油

pepper and salt to taste 

胡椒粉和盐调味


Method : 

1. Soak beancurd sheet in hot water for 30 minutes to 1 Hour (till expand) 

2. Blanch meat in room temperature water 

3. Once boil can off heat and remove pork 

4. Heat oil and Add garlic clove and ginger slice to inner thermal pot 

5. Add Pork 

6. Add seasoning 

7. Add Knotted Beancurd Sheets 

8. Once boil, transfer to thermal Pot 

9. Let it sit for 5 hours 

10. Put on stove to heat up 

11. Add pepper and salt to taste 


做法:

1. 热水泡发豆结约30分钟至1小时

2. 用室温水川烫肉头

3. 水滚后就可取出肉头

4. 在焖烧内锅里热油,加蒜头和姜片

5. 加猪肉

6. 加调味料

7. 加豆结

8. 煮滚后就放入焖烧外锅里

9. 静置5小时

10. 放回火炉煮滚

11. 加胡椒粉和盐调味


Tips: Add cooking wine when blanch (to remove bad odour)

川烫时加料酒,帮助去腥

* No Mixer 无需搅拌机

* Soft & Fluffy 松软可口

* Use Low GI Sugar 用低升糖赤砂糖








Recently I like to use Low GI Sugar for my bakes. As it can yield the same result as caster sugar (except for bread making). I used Crunchy Peanut Butter, you can use creamy type too.

Behind the scene: I did IG giveaway recently, purpose is to give back, at the same time enjoy the process of giving and making. I also feel less stressful to give away then to sell my goods, this is also my way of slow Living. 


最近我喜欢用低升糖赤砂糖在烘焙上,主要是它可白砂糖一样可取得蓬松的效果(除了面包)。至于花生酱,我用的是粗颗粒花生酱,你也可用无颗粒花生酱。


幕后花絮:最近在IG分享中秋节送礼活动,主要是回馈和享受制作和送礼的过程。送出自制的食物,对我来说也未尝不是一种慢活的态度。

Wet Ingredients 湿性材料

1 Medium Egg 中型鸡蛋 

70g Low GI Sugar 低升糖赤砂糖

1/2 tsp vanilla essence 香草精

100g Milk 牛奶

25g Peanut Butter 花生酱

40g Cooking Oil 米糠油(或其他无味食用油)


Dry Ingredients 干性材料

1/2 tsp Baking Powder 泡打粉

1/4 tsp Baking Soda 小苏打

160g All Purpose Flour 普通面粉


Method:

Beat sugar and egg till foamy 

Add other wet ingredients gradually 

Mix and sift all dry ingredients 

Combine wet and dry ingredients 

(Optional) Add Chocolate Chips 

add Grounded Peanut or Peanut Powder for extra crunch

Bake in 170 degree preheated oven for 35 minutes 


打发鸡蛋与砂糖至微微起泡

逐步加其他湿性材料

过筛和混合干性材料

混合干性与湿性材料

随个人喜欢加巧克力粒

我喜欢外层有脆度,所以加上花生粉在表层

放入170度预热烤箱烤35分钟

烤脆皮潮州月饼


Mid-Autumn Festival is around the corner, did not buy any mooncake this year so decide to challenge myself to make this Teochew Flaky Mooncake, make small portion to try out. Still need practice to perfect it, but flaky still. And taste wise, I am surprised that it has strong milk taste even though I did not add any milk powder or milk. 


中秋节要到了,家里没买月饼,所以决定挑战自己做潮州月饼。虽然卖相还有待改进,但还是很酥脆,而且没有放牛奶或奶粉,却吃出很浓郁的奶味。很不错!


* small portion 小份量

* Baked not deep fry 烘焙而非油炸


Baked Teochew Flaky Mooncake

烤脆皮潮州月饼

Water Dough 油皮

110g Plain Flour 普通面粉

1 tbsp (15g) icing sugar 糖粉

55g water 清水

28g Unsalted Butter 无盐牛油


Rest in fridge for 20 minutes 

放冰箱静置20分钟


Oil Dough 油酥

47g Unsalted Butter 无盐牛油

90g Plain Flour 普通面粉


Salted egg yolk (drizzle with white wine to remove odour)

Bake at 150 degree for 15 minutes 


咸蛋黄(淋白酒去腥)

放入150度预热烤箱烤15分钟


Method :

Water Dough Divide into 6 portion

Oil dough divide into 2:

Add 1 tsp homemade purple sweet potato powder

Add 1/2 tsp pandan extract

wrap Oil dough with water dough 

Roll twice 

can put any filling, I put yam with salted egg yolk 

Bake in 180 degree preheated oven for 25 minutes 

Tip :Best to reheat before eat, to maintain the flaky effect

油酥分成两份

加自制紫薯粉 (食谱可看之前的视频)

加班兰香精

油皮包油酥

卷两次

可放任何内馅,我放芋泥和咸蛋黄

放入180度预热烤箱烤25分钟



小提醒:吃之前记得加热,以取得外皮酥脆的效果

猪仔饼(用自制碱水)



Now that I know how to do homemade alkaline water, I no need to buy Alkaline Water and throw after a few time use anymore! 

现在会做碱水,以后就不用每次买一整瓶碱水,只用一点点就丢掉!


Homemade Alkaline Water Recipe 

自制碱水做法

1 tbsp Baking Soda 小苏打

bake in 120 degree preheated oven for 1 hour 

放入120度预热烤箱烤1小时

Keep in airtight container, add water when making alkaline water 

待凉后就可装入密闭盒,加水后就是碱水

1/2 tsp baked baking soda 熟小苏打 + 2 tsp water 清水 = Alkaline water 碱水


Mooncake biscuit Recipe

猪仔饼做法

Ingredients 材料:

35g Golden Syrup 糖浆

15g Peanut Oil 花生油

1/2 tsp Alkaline Water 碱水

60g Plain Flour 普通面粉


Method : 

1. Mix all ingredients to form dough 

2. Proof for 2 hours or overnight 

3. 15g dough + 10g Filling 

4. bake in 160 degree preheated oven for 10 minutes

5. Egg wash: 1 Egg Yolk + Milk + Oil 

6. bake in 160 degree preheated oven for 7 minutes

7. need to let them soften for 2-3 days before eat 


做法:

1)材料混合成团

2)静置2小时或隔夜

3)准备15克面团+ 10克内馅 (我用椰枣泥,你也可用豆沙、芋泥当内馅)

4)放入160度预热烤箱烤10分钟

5) 准备蛋液:1个蛋黄少许牛奶少许油

6)放入160度预热烤箱烤7分钟

7) 需要回油2-3天才能享用


Tip:

Best not to bake above 170 degree to prevent cracked 

烤箱温度最好不要在170度或以上,以免表面龟裂
