Vlog 16 - Steam Banana Chocolate Cake + Training Happy | Lunch at Jack's Place | Juggling 2 course  @FoodiEat随食慢活  The making of Steam Banana Chocolate Cake. Yield small cake loaf 


Ingredients: 

1 Banana (75g, Mashed) 

1 Egg (55g)

40g Low GI Sugar 

Optional) 1/4 tsp Vanilla Essence 

1 tbsp Rice bran oil


25g Cake Flour (Sifted)

40g Self Raising Flour (Sifted) 

1/4 Baking Soda (Sifted) 


B: 

1 tsp Cocoa Powder 

5g Milk 


Method:

Flour mixture Add to banana mixture 

Add 2/3 mixture to mold 

Remaining mixture mix with cocoa powder and milk 

Add cocoa mixture to mold

Medium Heat Steam for 20 minutes 


成分:

香蕉((75g, 捣烂)   

鸡蛋  (55g)

40g 低升糖赤糖 

(可随个人喜好)1/4 tsp 香草精

1 tbsp 米糠油


25g 低筋面粉(过筛) 

40g 自发粉(过筛)  

1/4 tsp 苏打粉(过筛) 


B:

1 tsp 可可粉

5g 牛奶


做法:

干粉与香蕉液体混合

2/3份量到模具

另外1/3份量与B:可可粉和牛奶混合 

加可可面糊到香蕉面糊上

中火蒸20分钟

【Easy Cake RECIPE】Low Sugar No BS Milo Lava Cake | ❤️低糖美禄溶岩蛋糕| 没有巧克力的巧克力蛋糕 |记录失败原因

This Milo Lava cake does not require Baking Soda, No baking powder, only 5 ingredients and 5 minutes. But it is also prompt to failure. No lava, only cake.
After some trial and error, I managed to steam some sucessful work. And here I shared my findings,and 2 versions.
这美禄熔岩蛋糕很容易做,无苏打粉、无泡打粉,只需5种材料,只需5分钟。可是它却不容易成功,成品没有熔岩,只有蛋糕。
经过几次的尝试之后,我终于得到了梦寐以求的成果。在此分享两个版本。

Ingredient成份: 
A:
30g Milo powder
30克美禄粉
1/2 or 1 tbsp hot water(depends on the result you want) 
1/2或1汤匙热水(视你要取得的效果)
1 egg
1粒蛋
1 tbsp caster sugar 
1汤匙白糖
20g plain flour 
20克面粉

B:20g melted butter
20克牛油(溶化)

Method做法:
  1. All ingredients AMix well. 全部搅拌至无粉状
  2. Add B:melted butter  加液态牛油
  3. Grease moulds(I use silicon moulds) and pour in mixture . 给模具涂油, 倒入液体
  4. Steam on medium high heat for 5 minutes. 中大火蒸5分钟
  5. Before serve, Sprinkle with Milo powder. 吃之前可洒上美禄粉点缀
Version 1:
Key point: Milo+1/2 tbsp water, Med high heat 5 min
重点:美禄+1/2汤匙水,中大火蒸5分钟
Version 2:
Key point: Milo+1 tbsp water, Med heat 5 min
重点:美禄+1汤匙水,中火蒸5分钟

Ingredients材料:
180g cake flour
180克蛋糕粉
3 tbsp cocoa powder
3汤匙可可粉
1 tsp baking soda
1 茶匙苏打粉
1/2 tsp himalayan salt
1/2茶匙玫瑰盐
120g sugar
120克砂糖
6 tbsp rice bran oil
6汤匙米糠油
1 tbsp Apple cidar Vinegar
1 汤匙苹果醋
1 tsp Vanilla essence
1茶匙香草精
1 cup water
1杯清水

Method做法:
1.All ingredients Mix well
全部材料搅拌均匀
2. Pour to mold
倒入模具
3. Preheat oven at 180 deg
预热烤箱180度
4. Bake for 45 minutes
烤45分钟

Easy Deep Chocolate Pound Cake



前几天我突然很想吃巧克力蛋糕,所以在网上找做法简单又低胆固醇的食谱,给我找到了这个食谱。虽然原来食谱做的是杯子蛋糕,也没有用蛋,理因不符合pound cake的做法,但为求方便,我做了pound cake状的巧克力蛋糕。这食谱没有蛋,我也把油减至35ml,糖也减至60g,吃起来较不觉得太罪恶。

INGREDIENTS:

1 1/2 cups all purpose flour
1/4 cup unsweetened cocoa powder
1 cup granulated sugar
1 teaspoon baking soda
1/2 teaspoon salt
1 cup brewed coffee (or 1 cup of warm water mixed with 1 1/2 teaspoons of espresso powder or instant coffee granules)
1 Tbsp white vinegar
2 teaspoons vanilla extract
6 Tbsp (1/4 cup plus 2 Tbsp) olive oil

METHOD:

1 Preheat oven to 350°F with a rack in the middle position. Prepare a muffin tin with cupcake liners.

2 In a large bowl, vigorously whisk together the flour, cocoa powder, sugar, baking soda, and salt until there are no visible clumps (cocoa tends to clump up).

3 In a separate bowl, mix together the coffee (or water plus coffee granules), vinegar, vanilla extract, and olive oil.

4 Pour the wet ingredients into the dry ingredients and stir only until they just come together. The mixture should be thin and rather lumpy.

5 Ladle the batter into the cupcake liners, filling them about two-thirds of the way full. Place in oven and bake for 18 to 20 minutes, until a bamboo skewer inserted in the center comes out clean.

6 Remove from oven and let cool in the pan for 5 minutes, then remove from pan and let cool on a rack. Once cool, you can eat plain, sprinkle with powdered sugar, or drizzle or coat with frosting.

One Bowl Easy Chocolate Cake


Not sure if you miss me when I MIA (missing in action)for almost two week. I am now back in action after a work trip to Beijing. Will show what I ate there later in this blog, stay tune. ;)

I definitely miss home and miss cooking and baking. I love the smell of Changi Airport when i touched down... Mmmm.. So nice! Like home cooked food... Haha!

Looking back at what i have baked and cooked... This is by far one of my favourite recipe! It's easy, no fail and nice to eat--soft, spongy, and so "chocolate-licious"! Adopted from Martha Steward recipe, it require no mixer, little oil and just mix all in a bowl. Here is the original recipe and what I used:

Ingredients:
3/4 cup unsweetened cocoa powder (I used 1/2 cup, 120g)
1 1/2 cups all-purpose flour (360g)
1 1/2 cups sugar (I used 1/2 cups, 120g)
1 1/2 teaspoons baking soda
3/4 teaspoon baking powder
3/4 teaspoon salt
2 large eggs
3/4 cup warm water (180g)
3/4 cup buttermilk (I used 3/4 cup low fat milk with 3/4 tsp vinegar, set for 5 minute or more)
3 tablespoons safflower oil (I used canola oil)
1 teaspoon pure vanilla extract

Method:
1. Preheat oven to 350 degrees.
2. Sift together cocoa powder, flour, sugar, baking soda, baking powder, and salt into a large bowl.
3. Add eggs, warm water, milk, oil, and vanilla, and mix until smooth, about 3 minutes. Scrape down the sides and bottom of bowl to assure batter is well mixed.
4. Pour batter in lined loaf pan, filling 3/4 full.
5. Bake until tops spring back when touched, about 30 minutes.
6. Transfer to a wire rack; let cool completely.

P.S: I topped cake with cream cheese and almond flakes.

Merry X'mas! Chocolate and Raisin Cookies



Belated Merry X'mas and Happy New Year!! This is what I baked and gave to my colleagues and friends before Christmas. I baked cookies in three batches: first was with chocolate chips, second batch was with M & M(as nose or mouth) and raisins(as eyes) and third batch was using chocolate chips and raisins.

All these are using the recipe I posted earlier.

Besides cookies, I also baked and gave chocolate cupcakes. This time I used another easy chocolate cakes recipe. Will post the recipe later. Stay tune. :)

Easy Chocolate Chip Cookies


I know what to give to my dear colleagues but still tossing with what type of cookies to bake. As X'mas celebration is just in few days time, I need to look for something easy and quick to make. This recipe does not require mixer and is a one bowl formula!

I did not use wheat flour but self raising flour and it turned out pretty good for my first attempt! Just the right texture, not too hard nor soft. As I added orange zest, it did give a hint of refreshing orange flavor. Guessed my colleagues will like it! Very good recipe to adopt.

Ingredients: (make 44-45 cookies)
2/3 cup brown sugar (I used 1/3 cup)
1/3 cup vegetable oil (I used olive oil)
1 tsp vanilla essence
1 large egg
1 cup self Raising flour (sifted-I omitted baking powder and salt)
70gm dark chocolate chips
Zest from 1/2 orange

Methods:
1. Preheat oven to 175 deg C. Lined with cooking sheet.
2. Mix together brown sugar, oil, vanilla essence and egg. When well mixed, add self raising flour and mix well. Stir in chocolate chips and orange zest.
3. Scoop small teaspoon of soft dough onto cooking sheet. Bake for 15 minutes.
4. Cookies is ready when edge turn slightly brown.
5. Cool on wire rack. Dust with icing sugar.

Although it's not very creative, but it's christmasy. Therefore I have submitted this post to very good recipes white Christmas challenge.

Easy Chocolate Cupcakes


That day my friend craved for chocolate cakes(due to PMS) but I was not. After a week, my turn to crave for chocolate cakes. So I searched around for easy to make chocolate cake that no need to use electric mixer(because I'm lazy, ha!) and this is the recipe I followed(I used half of the ingredients):

(adopted from Martha Stewart recipe)

Ingredients:(make 15 small cupcakes)
1/3 cup (36g) unsweetened cocoa powder
3/4 cup (82.5g) all purpose flour (I used cake flour)
3/4 cups icing sugar (I used 1/2 cups=60g)
3/4 tsp baking soda
1/3 tsp baking powder
1/3 tsp salt
1 egg
1/3 cup (80g) warm water
1/3 cup buttermilk (I used low fat milk + 1 tsp white vinegar)
1 1/2 tbs safflower oil( I used vegetable oil)
1/2 tsp pure vanilla extract (I used vanilla essence)

Method:
1. Preheat oven at 175 degree C.
2. Sift all dry ingredients: cocoa powder, flour, sugar, salt, baking soda and baking powder in a big bowl.
3. Add egg, warm water, milk, oil and vanilla essence, mix well and stir till smooth, about 3 minutes.
4. Pour mixture in piping bag and fill cup 3/4 full.
4. Bake for 20 minutes, till tops spring back when touched.
5. Transfer to a wire rack , let cool completely.

Verdict: I like it not too sweet and the heavenly chocolate aroma, it really reminds me of awfully chocolate cake. It definitely fulfilled my craving and I am happy now. ;)

P.S: no frosting for me, so I added some almond slices as decoration and give some crunch.
