Vlog 16 - Steam Banana Chocolate Cake + Training Happy | Lunch at Jack's Place | Juggling 2 course  @FoodiEat随食慢活  The making of Steam Banana Chocolate Cake. This week is also my busy week to juggling 2 course and celebrate our anniversary. . 想用掉冰箱里的香蕉,就做了这个做法简单的香蕉巧克力蛋糕,还分享我庆祝周年纪念日的午餐时刻,及忙碌却充实的学生日子。

Yield small cake loaf 


Ingredients: 

1 Banana (75g, Mashed) 

1 Egg (55g)

40g Low GI Sugar 

Optional) 1/4 tsp Vanilla Essence 

1 tbsp Rice bran oil


25g Cake Flour (Sifted)

40g Self Raising Flour (Sifted) 

1/4 Baking Soda (Sifted) 


B: 

1 tsp Cocoa Powder 

5g Milk 


Method:

Flour mixture Add to banana mixture 

Add 2/3 mixture to mold 

Remaining mixture mix with cocoa powder and milk 

Add cocoa mixture to mold

Medium Heat Steam for 20 minutes 


成分:

香蕉((75g, 捣烂)   

鸡蛋  (55g)

40g 低升糖赤糖 

(可随个人喜好)1/4 tsp 香草精

1 tbsp 米糠油


25g 低筋面粉(过筛) 

40g 自发粉(过筛)  

1/4 tsp 苏打粉(过筛) 


B:

1 tsp 可可粉

5g 牛奶


做法:

干粉与香蕉液体混合

2/3份量到模具

另外1/3份量与B:可可粉和牛奶混合 

加可可面糊到香蕉面糊上

中火蒸20分钟

Low GI Sticky Date Pudding, Soft & Moist for Days! 低升糖版枣泥布丁蛋糕,松软湿润几天了  @FoodiEat随食慢活  最近很忙,没时间出片。但每次剪片时,虽然眼睛已经快睁不开了,看到自己的成品还是很有满足感。希望你也一样,看了也想咬一口。 这次我没有用砂糖,只用枣糖来做这甜品,但还真的适合。而且最重要的是负担变少了,因为低升糖。 新年要到了,不要有太多负担又想吃点甜的,这个很适合。祝你虎年,虎虎生威,耀虎扬威! * No mixer 无需搅拌器 * Simple Recipe 简单易做 * Soft & Moist for days 几天都松软湿润

Ingredients材料:

A:

185g chopped dates 椰枣碎

220ml Water 清水

B:

93g Self Raising Flour (Sift)自发粉

1/4 tsp cinnamon powder (Sift)肉桂粉


C: 

45g butter 牛油

45g Date Sugar 枣糖


1/2 tsp + 1/4 tsp Baking Soda 小苏打

1 & 1/2 Egg 鸡蛋


Method :

1. Cook A to boil 

2. Add Baking Soda 

3. Add B to A

4. Cream C 

5. Add Egg in parts

6. Add Butter mixture to date mixture 

7. Add mixture to greased pan 

8. Fill 70%-80%full 

9. bake in 180 degree preheated oven for 35 minutes 


做法:

1. 煮材料A至滚

2. 加小苏打

3. 加材料B入A

4. 搅拌C

5 分次加鸡蛋

6. 混合面糊与牛油溶液

7. 面糊倒入抹了油的模具中

8. 加到7-8分满

9. 放入180度预热烤箱烤35分钟

我喜欢不加糖浆的布丁蛋糕,因为已经够湿润也够甜了

My Best X'mas Gift - One and only X’mas Mixed Fruit Osmanthus Madeleines | 我的圣诞杂果桂花玛德琳蛋糕


This is My First Attempt making Madeleines, So happy to see tall tall humps! Means that it is successful! Thank you to Hanbit Cho for the recipe. This is my first time trying freshly baked Madeleines too and I love it! Outer shell is crispy and inside moist and soft! (unlike what I ate before)
After reheat in air fryer, it stays crispy again! P.S. And I Take out a old toy to bake with me this X'mas. Want to know what is that? Pls watch the video

X’mas Mixed Fruit Osmanthus Madeleines
杂果桂花玛德琳蛋糕

Yield 8 pieces 

可制成8


Ingredients 材料:

A:

42g Egg 鸡蛋 

6ml Milk 牛奶

40g Low GI Sugar 低升糖砂糖

Pinch of Salt 少许盐

1/4 tsp Vanilla Extract 香草精

1 tsp Osmanthus Syrup 桂花蜜


B:

45g Cake Flour + 1.5g Baking Powder (Sifted)

低筋面粉 + 泡打粉 (过筛)


C: 

53g Melted Grass Fed Butter 草饲牛油(溶化)

20g Organic Cranberries & Raisins (Chopped)

有机蔓越莓和葡萄干 (切碎)


Method : 

1. Mix all A ingredients in a bowl. 

2. Add B ingredients. Mix well 

3. Add C ingredients to mixture. Mix well 

4. Use melted butter to grease pan 

5. Put mixture in piping Bag. 

6. Pipe mixture to greased pan. Fill 90% full. 

7. Tap to release air bubble. 

8. Bake in 180 degree preheated oven for 10 minutes 

9. Serve after cool down.


P.S: Reheat in air fryer 150 degree for 3-5 min. It will remain the same result. 


做法:

1. 放A材料入碗中。

2. 加B材料。混合均匀。

3. 加C材料,搅匀。

4. 溶化牛油抹在烤盘上,备用。

5. 倒面糊入裱花袋。

6. 面糊挤入烤盘,9分满。

7. 敲几下消泡。

8. 放入180度预热烤箱烤10分钟

9. 放凉后即可享用。


注:隔天可以放入气炸锅弄热(150度3-5分钟即可),以取得外脆内软的效果。

【Easy Nonya Cake Recipe】Less Sweet Harum Manis - Gula Melaka Banana Cake...


低糖香蕉椰糖蒸糕

Less Sweet Harum Manis

* Nonya Steam Cake 娘惹蒸糕

Harum stands for fragrant, Manis stands for sweet. This fragrant and sweet Gula Melaka Banana Steam Cake is one of my favourite old school cake. So made this less sweet version.


Yield 15 Pieces

可制成15

Ingredients 材料:

A

100g gula Melaka 椰糖

2 pandan leave 班兰叶

175g Water 清水


B

1 Egg 鸡蛋

45g caster sugar 细砂糖


C

175g Cake Flour 低筋面粉

1/4 tsp Baking Soda 小苏打

+ 1/2 tsp Baking Powder 泡打粉


D

1/2 tsp vanilla essence 香草精

25g melted butter 溶化牛油


Method:

  1. Cook A to dissolve 
  2. Beat B till pale and smooth
  3. Sift all C flour 
  4. Add C to B in parts 
  5. Add Sifted Gula Melaka mixture in parts  
  6. Add D and mix well 
  7. Pour mixture to greased moulds 
  8. Top with frozen Banana slice 
  9. Steam on medium heat for 15 minutes 
 做法:
1. 煮A至椰糖溶化
2.  打B至发白柔滑
3. C面粉过筛
4. 分次加面粉入B
5. 分次加椰糖水
6. D拌匀
7. 倒面糊入涂了油的模具
8. 用冷冻香蕉片点缀
9. 中火蒸15分钟

Best Low Fat Baked Tapioca Cake,Low GI and only used 4 Ingredients | ❤️ ...


Low Fat Baked Tapioca Cake

少油烤木薯糕


* No Flour 无面粉

* less oil 少油

* Use Coconut Cream 用浓缩椰浆

* Soft for days 维持松软

Bought coconut cream by mistake, so have to use it as coconut milk substitute Try newly bought Low GI brown sugar . Used Low GI sugar so not as sinful 


Soft, chewy and not bitter 

Steam or bake again, stay soft for days


买错了椰奶,只好用浓缩椰浆代替。试用新买的低升糖赤砂糖.用低升糖赤砂糖,吃多了也比较没有罪恶感松软有嚼劲而且不会苦.隔天再蒸或烤,一样松软可口


Tips: Remove liquid from grated tapioca (reduce bitterness)

去除木薯泥的水份(可减少苦涩)



Low Fat Baked Tapioca Cake

少油烤木薯糕

Ingredients 材料: 

500g Grated Tapioca 木薯泥

36g Coconut Cream 浓缩椰浆

72g Water 清水

60g Low GI Brown Sugar 低升糖赤砂糖+ 60g Caster Sugar 细砂糖

20g Butter 牛油


Mix all ingredients 混合全部材料

Grease pan with melted butter 

为模具涂油

bake in 180 degree preheated oven for 45 minutes 

放入180度预热烤箱烤45分钟

(Optional) Bake in 230 degree Upper Heat for Another 10 minutes 

要上色可转至230度上火烤10分钟

材料 Ingredients:
(For 5-8 person, 5-8人份)
A: 175g 蛋糕粉 Cake Flour 50g 杏仁粉 Grounded Almond 1 tsp 泡打粉Baking Powder 100g 细砂糖 Sugar
B: 6 Tbsp 米糠油 Rice Bran Oil 1 tsp 香草精 Vanilla Essence 1 Cup 清水 Water
做法 Method:
1. 蛋糕粉过筛 Cake Flour Sieve Through
2. 材料A拌匀 Ingredients A mix well 
3. 中间留个洞 make a well at centre 
4. 加入材料B并拌匀 Add in Ingredients B and mix well 
5. 把粉浆倒入模具里  Pour mixture to mould
6. 震几下去除气泡 tap to release air bubbles
7. 放入170度预热烤箱烤50分钟 

bake in 170 degree preheated oven for 50 minutes 

8. 架上放凉 Keep cool on rack 


Note:

我是用8cm x 22cm 模具(或6x6x3” 模具)

I Used 8cm x 22cm mould (or can use 6x6x3” mould)
