This HK fried noodle is a simple breakfast in HK, just like economic noodle or beehoon in Singapore.
Each time I go HK, I will have this for breakfast.
Not all eatery in HK serve nice fried noodle, some are just tasteless.
So when I crave for it, I will cook this for breakfast or even have it for lunch and sometimes dinner.
This is a foolproof recipe. Do give it a try and you will love it.

Hong Kong Fried Noodle 香港炒面

Ingredients:
1 block of fine noodle
3 handful of bean sprouts
1 tbsp mince garlic
1 tbsp of Soy Sauce
1 tbsp of Oyster Sauce
1 tsp sugar
1 tsp dark soy sauce
some sesame oil and pepper
Method:
1. Add noodle to boiling water 水滚后加面 (这份量可吃两大碗)
2. Cook for about 4 minutes till soft 煮约4分钟至软
3. Remove from heat 捞起备用
4. Heat oil add minced garlic 热油后加入蒜末炒香
5. Add bean sprouts 加豆芽继续炒
6. Add oyster sauce 加1 汤匙蚝油
7. Add soy sauce 加1 汤匙酱青
8. Add noodle and stir fried evenly 加面炒匀
9. Add dark soy sauce & 2 tbsp water 加1茶匙黑酱油和2汤匙水
10. Add about 1 tsp sugar 加一茶匙糖
11. Add some sesame oil 加点麻油
12. Add some pepper 加少许胡椒粉
13. Stir well and ready to serve 炒均匀后就可上桌
P.S. This version is without leek. Good for those who don't like spring onion, coriander, leek etc.
You can also add other veggie or mushroom if you want 你也可以加其他蔬菜和菇类
