Vlog 12/22. - Food I want to eat : Mini Pandan Kueh + Last meal at my fave restaurant  @FoodiEat随食慢活  Recently I ate food that I like to eat, maybe there's are the food you like too. 最近我吃了喜欢的食物,或许也是你喜欢的食物。

Ingredients:

65g Organic Plain Flour

33g Tapioca Flour 

1/2 tsp Baking Powder 

42g Low IG sugar 

1/4 tsp Salt 

30g Beaten Egg 

62g Coconut Cream 

1/2 tbsp Rice Bran oil 

1/4 tsp Pandan Extract 

125g Water 


Method:

Mix wet and dry ingredients 

Set aside for 40 minutes 

Grease pan with oil 

Fill to 90% full

Till edge turn golden brown, use skewer to remove.

有机普通面粉

33g 木薯粉

1/2 tsp 泡打粉

42g  低升糖赤糖

1/4 tsp 玫瑰盐

30g 鸡蛋

62g  椰奶油

1/2 tbsp 米糠油

1/4 tsp  班兰香精

125g 清水


做法:

混合干湿材料

静置40分钟

模具刷上食用油

倒面糊至9分满

糕点金黄后就可用牙签取出

Vlog 11/22 Life after COVID + Made Custard Mooncake 冠病之后+咸蛋奶黄月饼 Just sharing my thoughts after covid, hope it is inspiring to you. 两年后,还是中招了,希望我的感悟能够给你一些启发。

(Yield 7 pc - Each 50g)

Recipe adapted from Philips.com.hk and peachybunnymel.wordpress.com 

Mooncake Crust 

52g butter + 20g Low GI sugar 

9g Egg 

10g Milk 

100g Cake Flour 

Put in chiller rest for 1 hour 


Filling

7g Cake Flour 

8g Custard Flour 

7g Milk Powder

20g Low GI Sugar 

34g coconut cream 

10g Milk 

12g Egg 

8g condense milk 

16g Unsalted Butter (Room Temp)

1-2 Salted egg yolk 


Method: 

Mix wet to dry ingredients (except salted egg yolk)

Steam for 20 minutes 

Salted egg yolk Add some cooking wine to remove unpleasant smell

Air fry 150 degree for 5 minutes 

Mix with custard filling 

Put in chiller to set 


Assemble: 

Roll dough and filling into balls 

Mold into shape

Put in 200 degree preheated oven for 5 minutes 

Egg Wash

Put back into oven for 5 minutes 

(Optional) Brush syrup

Put in 200 degree preheated oven for 5 minutes 


饼皮

2g 牛油 + 20g 低升糖赤糖 

9g 鸡蛋

10g  牛奶

100g 低筋面粉

放冰箱冷冻1小时


内馅

7g 低筋面粉

8g 吉士粉

7g 奶粉

20g  低升糖赤糖

34g 椰奶

10g 牛奶

12g 鸡蛋

8g 炼乳

16g 牛油

1-2 咸蛋黄


做法:

混合干湿材料 (除了咸蛋黄)

20分钟

咸蛋黄加点料理酒去除腥味

放气炸锅150度加热5分钟 

放入奶黄馅

放入冰箱定型


组装:

把饼皮面团和内馅揉成圆球

放入模具塑型

放入预热200度烤箱烤5分钟

刷蛋液

放入预热200度烤箱烤5分钟

(随个人喜欢)刷糖水

放入预热200度烤箱烤5分钟

No Knead Tang Zhong Pandan Coconut Bread 无揉汤种班兰面包


I always wanted to try making no knead bread, as my hand was swollen while kneading. This recipe yield a soft and easy bread. I am happy :) 可能手法不对,曾揉面到手肿,所以一直很想尝试不用揉面的面包食谱。这个食谱我用了汤种,因为汤种面包更柔软,保质期更长. 喜欢它的柔软口感。简单又好吃,一定要试一试!


P.S: Tang Zhong(water roux) Bread can keep longer & Stay Soft 


I adapted recipe from 小红书 and my own research. 


(Yield 1 small bread loaf)

Tang Zhong 汤种

20g Bread Flour

高筋面粉

100ml Water 

清水


Cook on Low heat 

低温煮至浓稠

Cool down before use

待凉才使用


Dough 面团

1 Egg 

鸡蛋

20ml coconut cream + 20ml milk

椰奶+牛奶

5g Low GI sugar

低升糖砂糖

2g Yeast 

干酵母

200g Bread Flour 

高筋面粉

70g Tangzhong 

汤种

2g Salt 

玫瑰盐

15g butter 

牛油


Method:

1. Mix all ingredients, Rest for 15 minutes 

2. Fold dough with water, rest for 15 minutes

3. Repeat the steps

4. Rest overnight in chiller 

5. Next day, Proof for 1 hour (till double in size)

6. Roll and fold to shape, put in loaf pan,  Proof for 45 minutes (till double in size)

7. Brush with milk

8. Put in 180 degree preheated oven, bake for 20 minutes


做法:

1. 混合全部材料,静置15分钟

2. 用水防沾,折起面团。

3. 重复步骤

4. 放冰箱冷藏一晚

5. 隔天取出,发酵1小时(至大一倍)

6. 排气,擀面,放面团入模具后,发酵45分钟(至大一倍)

7. 刷上牛奶

8. 放入预热180度烤箱,烤20分钟。

Recently craving for so thinking to try making it using Thermal Flask. This recipe yield the familiar taste that I remember. And save energy too.This portion is for 2-3 pax. 比较年轻时吃过这道糖水。最近有点想念这个味道,所以尝试用焖烧罐来煮。跟我之前想念的味道一样,而且更省事,适合我! Quail Eggs Red Date Dessert using Thermal Flask 鹌鹑蛋红枣糖水(焖烧罐煮法) 1/2 White fungus (soaked) 白木耳(泡发) 6 Red Dates (Washed) 红枣(洗净) 1 handful Goji berry 枸杞适量(洗净) 4-5 Dried longan 龙眼(洗净) 60g Rock Sugar 冰糖 7-8 Quail Eggs 鹌鹑蛋 750nl Hot Water 热水

Method:
1. Add all ingredients in preheated thermal flask
2. Rest for 3 hours
3. Ready to serve

做法:
1. 全部材料放入焖烧罐
2. 静置3小时。
3. 可享用。

This is a pandan version, it does remind me of the pandan waffle that I always order from bread shop but this one is crispier even cold and more chewy. While I was making waffle, a visitor suddenly made his special appearance! Must watch till the end to see his full action. 最近终于试吃了网红美食麻薯华夫饼,真的好吃,所以决定在家试做。做了这个班兰口味华夫饼。口感和味道有像我常去面包店买的平民小吃,但这个更Q弹,而且冷了还带点脆。 在做华夫饼的当儿,突然出现一位特别来宾!一定要看到最后才能得到完整画面。 Pandan Mochi Waffle 班兰Q弹华夫饼
Ingredients 材料: 177g Milk 牛奶 1 Medium Egg 中型鸡蛋 1/2 tsp Pandan Coconut Essence 班兰香精 170g Self Raising Flour 自发粉 43g Glutitious Rice Flour 糯米粉 1/4 tsp Salt 盐 43g Sugar (I used Low GI Sugar) 我用低升糖砂糖

Method:
1. Mix Wet & dry ingredients 

2. Preheat Waffle Maker with oil 

3. Add Mixture 

4. Remove waffle after 3 minutes, Serve warm. 


做法:

1. 混合干湿材料

2. 加少许油预热华夫饼机

3. 加面糊

4. 3分钟后取出,即可享用。

(Recipe adapted from Nonyacooking, link Here) This is a Low GI , rice cooker version Black Glutinous Rice Dessert, please give it a try. 这是饭锅版且较低升糖(用了椰枣糖浆)的健康甜品。试试看吧! Do watch video till the end, see how I touched Happy bird. 记得观看到最后,看我如何与Happy第一次“身体接触”
Ingredients 材料: 60g Black Glutinous Rice 黑糯米 850ml Water 清水 2 Pandan Leave 斑兰叶 70g Rock Sugar 冰糖 30g Date Syrup 枣糖浆 1/2 tbsp Corn Starch Water 玉米粉水 Some coconut milk 椰奶适量

Method :
1. Soak Black Glutinous Rice for 4 hours
2. Put drained rice and pandan leaves in Rice Cooker
3. Add water and set "Congee" function.
4. Once done, add rock sugar and syrup.
5. Keep warm for 15 minutes.
6. For non-starchy version, can just serve with coconut cream or milk.
7. For starchy version, stir in corn starch water and serve with coconut milk.


做法:
1. 泡发黑糯米约4小时。
2. 把过滤的黑糯米和班兰叶放入饭锅里。
3. 加水,按“煮粥”模式
4. 煮熟后,加冰糖和糖浆。
5. 保温15分钟。

Vlog #04/22 - Reason for not posting on YouTube | Cooking "Fake" Scallop...




从韩国烹饪节目中得到灵感,心血来潮来煮这道“素带子”。

Cooking vegetarian “scallops “ that I learned from a Korean cooking show


Ingredients : 

King Oyster Mushroom 

Salt to season 

Sauce Seasoning:

1 Mince Garlic

1 tbsp Soy Sauce 

1/2 tsp Sugar 

1 tsp Sesame Oil 

1/4tsp Oyster Sauce 


Method:

1. Use damp kitchen towel to wipe King Oyster Mushroom 

2. Season with salt 

3. Heat Pan with Cooking Oil and butter (omit if you are vegetarian)

4  Add mushroom. Turn over if become slightly brown

5. Top with sauce 

6. Simmer for 5 minutes 

7. Garnish with spring onion



材料:

2个杏鲍菇

少许盐调味

葱花点缀


酱汁:

1瓣蒜末

1 汤匙生抽

1/2 茶匙糖

1 茶匙麻油

1/4茶匙蚝油


做法:

1. 用微湿的厨房纸巾擦拭2个杏鲍菇

2. 撒一些盐调味

3. 锅中加食用油和牛油(茹素者可省略)

4. 放入杏鲍菇,煎至金黄色后翻面

5. 淋上酱汁

6. 焖煮5分钟

7. 葱花点缀


Tips: 

低温热油(因为牛油的烟点低,不适合大火)

Cook on Low heat (As butter have low smoke point)
