Low Sugar Healthy Soft Cinnamon Roll |❤️ 低糖健康松软肉桂卷【Eng】

My FB account has been hacked, and was emotionally affected at times. So to divert my attention, I choose to bake and cook something that I like. Cinnamon Roll is always my all time favourite, so decided to make a guilt free low sugar version. No icing, only used 1 tbsp of sugar for the filling. Yet yield a sweet yet healthy cinnamon rolls. Secret is I used kurma dates to replace brown sugar. This low GI sugar substitute give enough sweetness, yet used less refined sugar. You should try it!

最近我的脸书账号被骇客入侵,心情多少受到影响。为了转移注意力,我动手做一些自己喜欢吃的食物。对我来说,肉桂卷会安抚我心灵的“心灵甜品”,所以做了低糖版,吃了也比较没有罪恶感。我不喜欢肉桂卷上有糖霜,内馅也只用了1汤匙的糖。用椰枣代替糖,甜度可媲美黑糖,又低升糖,也少了精致糖,吃多了也不怕。你也不妨试试看。
 
* Low GI Dates as Sugar Substitute 用椰枣代替糖 * Less Sugar 少糖 * Healthier Choice 较健康选择 低糖健康肉桂卷 Low Sugar Healthy Cinnamon Roll @随食慢活FoodiEat (Yield 15 pieces 可制成15份) Ingredients 材料: 260g Bread Flour 高筋面粉 1/2 tsp Pink Salt 玫瑰盐 25g Sugar 砂糖 1 Medium Size Egg 中型鸡蛋 (55g) 1 tsp Vanilla Essence 香草精 120ml Warm Milk 温牛奶 3g Instant Yeast 酵母粉 30g Butter 牛油 Filling 内馅: 1/2 cup Chopped Kurma Dates 椰枣粒 1 tbsp Cinnamon Powder 肉桂粉 1 tbsp Dark Brown Sugar 黑糖

Method 做法:
1. Mix warm milk with yeast, Rest for 5 minutes 
牛奶和酵母混合,静置5分钟

2. Mix all ingredients, Knead using mixer,bread maker, by hand 

全部材料混合,可用手、搅拌机或面包机揉面

3. Knead for 25 minutes 揉面约25分钟

4. Proof for 1 hour 醒面1小时

5. Roll to form rectangular shape 擀成长方形

6. Spread filling evenly 内馅铺均匀

7. Roll Up 卷起来

8. Each Cut 2.5cm 切2.5公分

9. Proof for 45 minutes发面45分钟

10. Bake in 170 degree preheated oven for 20 minutes 

放入170度预热烤箱烤20分钟


Tips: Can store in freezer and consume within 3 months

可冷冻起来,随时想吃就烤热。

See video to find out how: https://youtu.be/XgPrSfOxiVQ Butterfly Pea Flower Mango Coconut Agar Agar 蝶豆花芒果椰奶果冻 For Blue Agar Agar 菜燕部分 Ingredients 材料: 5-7g Agar Agar Powder 菜燕粉 500ml Butterfly Pea Flower and Mint Water 蝶豆花薄荷水 70g Sugar (this is the less sweet version. You can add up to 125g sugar) 砂糖 (依个人喜欢增加分量) Method: 1. Soak Butterfly Pea Flower and Mint in water for 10 minutes. Sieve well.
用水泡蝶豆花和薄荷叶约10分钟,过筛。 2. Pour into a pot, with Agar agar powder and sugar. Stir well.
倒入锅中,加菜燕粉和糖搅匀。 3. Remove from heat when sugar melt and texture thicken.
待糖溶化和浓稠后就可关火。 4. Pour onto mold half filled.
倒入模具中。 Coconut portion: 椰奶部分 Ingredients: 材料: 270ml water 清水 230ml coconut milk 椰奶 70g sugar (this is the less sweet version. You can add up to 125g sugar) 砂糖 (依个人喜欢增加分量) 5-7g agar agar powder 菜燕粉 1 mango 芒果 Method: 1. Pour water, coconut milk into a pot, add Agar agar powder and sugar. Stir well.
倒清水、椰奶、菜燕粉和砂糖入锅中,搅匀。 2. Remove from heat when sugar melt and texture thicken.
待糖溶化,液体变浓稠就可起锅。 3. Pour onto mold 90% filled. Add mango bits. Then pour the rest to the top.
倒入模具中达9分满。加芒果块,再倒至满。 4. Use toothpick to remove bubble.
用牙签搓破气i泡 5. Put in fridge to chill till harden and ready to serve.

This is my first time making Nonya Chang. Nonya Chang is my mom favourite (All along I prefer Bak Chang, Recipe here).
This year, I decided to challenge myself to make Nonya Chang (After seeing so many experts making). After making, I begin to appreciate the taste and art of Nonya Rice Dumpling.

(Recipe Adapted from Here) Ingredients 材料: 400g Glutinous Rice 糯米 (Rinse 冲洗) 5 Dried Mushroom 冬菇 150g pork collar 脢肉 (diced 切粒) + 150g minced meat 猪肉碎 1 tsp Soy Sauce 生抽 1/2 tsp Sugar 砂糖 1 tsp Dark Soy Sauce 黑酱油 1/4 tsp Salt 盐 8-10 pieces Bamboo Leaves 竹叶 Filling 内馅 1 tbsp Cooking Oil 食用油 30g garlic 蒜头 + 30g shallot 小葱头 (chopped 切碎) Add meat & mushrooms 加肉和冬菇 1 tsp Five Spice Powder 五香粉 1 tsp White Pepper Powder 白胡椒粉 100g Candied Winter Melon 冬瓜糖 (diced 切粒) 1 tbsp Coriander Powder 芫荽粉 1/2 tsp Bean Paste 豆酱 Cook Glutinous Rice 煮糯米 1 tsp Shallot Oil 葱油 1 chopped garlic clove 蒜头 1/4 tsp Salt 盐 1/4 tsp Coriander Powder 芫荽粉 Some pepper 胡椒粉少许

Preparation: Glutinous Rice 

事前准备:糯米

400g Glutinous Rice 糯米 (Rinse 冲洗)

Soak for 4 hours or overnight 

泡约4小时或隔夜


Preparation: Bamboo Leaves

事前准备:竹叶

8-10 pieces Bamboo Leaves 竹叶 (Washed 清洗干净)


Preparation: Dried Mushroom 

事前准备:冬菇

5 Dried Mushroom 冬菇 

(Washed 清洗干净)

Soak in hot water for 30 minutes 

泡热水约半小时


Marinate Pork

事前腌猪肉

150g pork collar 脢肉 (diced 切粒)

+ 150g minced meat 猪肉碎

1 tsp Soy Sauce 生抽

1/2 tsp Sugar 砂糖

1 tsp Dark Soy Sauce 黑酱油

1/4 tsp Salt 盐


Cook Filling 煮内馅

1 tbsp Cooking Oil 食用油

30g garlic 蒜头 + 30g shallot 小葱头 (chopped 切碎)

Add meat & mushrooms 加肉和冬菇

1 tsp Five Spice Powder 五香粉

1 tsp White Pepper Powder 白胡椒粉

100g Candied Winter Melon 冬瓜糖 (diced 切粒)

1 tbsp Coriander Powder 芫荽粉

1/2 tsp Bean Paste 豆酱


Cook Glutinous Rice 

煮糯米

1 tsp Shallot Oil 葱油

1 chopped garlic clove 蒜头

1/4 tsp Salt 盐

1/4 tsp Coriander Powder 芫荽粉

Some pepper 胡椒粉少许


Line rice cooker with bamboo leaves

饭锅铺成竹叶 - 增加香气

Add 100-150g mushroom water 加冬菇水

2 pandan Leaves 班兰叶

Quick Cook/Steam Mode - 20minutes

快煮/蒸煮模式 - 20分钟

Add Blue Pea Flower Water 加蝶豆花水

Quick Cook/Steam Mode - 20minutes

快煮/蒸煮模式 - 20分钟


好处 Advantage: 

use cooked rice not only foolproof but also shortened steaming time 

用煮好的糯米包粽子不但零失败也可缩短蒸粽子的时间

use softened meat is also foolproof and shortened steaming time

Cake Flour to make Cute Rice Dumpling Soft Pandan Sandwich Bun | 粽子造型松软班...

Rice Dumpling Pandan Sandwich Bun

First time use cake flour to make Chinese bun (Can don’t buy Bao flour!)

 第一次用蛋糕粉做包点(以后不用买包粉了!)👍😁


Recipe adapted from Here

[ Each piece weigh 25g (yield 11 buns)

每份25克(可制成11个包子)]


Ingredients 材料:

175g Cake Flour蛋糕粉

 + 1/2 tsp Baking Powder 泡打粉

100ml warm water 温水

+ 20g sugar砂糖 

+ 1/2tsp instant yeast 即发酵母

7g (1/2 tbsp) Shortening 植物性起酥油

1/4 tsp pandan extract班兰精油


Method 做法:

1. Mix all ingredients and knead using mixer,bread maker, by hand 

混合全部材料,可用手、搅拌机或面包机揉面

2. Knead till smooth & shiny

揉面至光滑即可

3. Rest for 30 minutes 

松弛30分钟

4. Weigh each piece 25g 

每份25克

5. Form ball shape 揉成球状

6. Roll & form Oval shape 擀成椭圆形

7. Spread thin layer of oil 涂上少许油

8. Fold into half 折半

9. Form triangle shape 塑成三角形

10. Use scraper to draw pattern 

用刮刀画出粽叶

11. Leave to proof for 15-20 minutes 

静置发酵15-20分钟

12. Put in steamer then turn on stove, 

Steam over medium high heat for 20 minutes 

放进蒸笼后开中大火蒸20分钟


Tips: 

- Tips 1: Best to wrap cover with cloth (prevent water drip on buns) 

小贴士:最好锅盖用布包着 (以防水滴在包上就不美了)

- Tips 2: Leave a little gap & rest for 5 minutes before uncover 

(to prevent wrinkle skin)

小贴士:开盖前先留一点细缝,并静置5分钟 (防皱皮)


How to Store: Put in freezer (can keep 4-6 weeks) 

如何保存:放冰箱冷冻库(可保存4-6星期)
