1 Egg 鸡蛋 30g Icing Sugar 糖粉 Mix well 搅拌均匀 1 Banana (Mashed) 1 香蕉(捣烂) 100g Plain Yogurt 原味优格 60g Cake Flour 蛋糕粉 Mix well 搅拌均匀
Method:
1. Preheat Oven 180 degrees
2. Put mixture in mold 3. Tap to release air bubbles 拍掉气泡 4. Set 180 degree 50 minutes 180度烤50分钟
5. Cool on tray and Enjoy!

35g Golden Syrup 糖清
15g Peanut Oil 花生油
2g Alkaline Water 碱水
Mix Well 搅拌均匀
60g Hong Kong Flour 香港面粉
Mix well & form dough 搅拌至呈面团
Rest for 2 hours 醒面2小时
Egg Wash
1 Egg Yolk 蛋黄
1 Tbsp Evaporated Milk 花奶1汤匙
A little oil 少许油
Sift so that effect will be even
过筛以让表面上色均匀
170 degree for 10 minutes 170度10分钟
“Oil Back” 15 minutes 回油15分钟
170 degrees 7 minutes 170度7分钟

Snowskin:
10g Cake Flour
30g Glutinous Rice Flour
25g Rice Flour
10g Wheat Starch
2 tbsp icing sugar
50ml Evaporated Milk
12ml Rice Bran Oil
120ml Osmanthus infused milk
Mix well and Steam. Knead and mold to shape
Filling: Store Bought Yam Paste with Melon Seed + Salted Egg Yolk

Egg Yolk Part:
1/2 Carrot
1/2 Lemon (juice)
Blended and Fill water to 250ml
1/2 tsp Agar Agar Powder
50g Sugar
Cook till boil & sugar dissolve. Chill till set.
Filling Part:
5 pitted Kurma Dates
50ml Evaporated Milk
1 tbsp Plain Yogurt
Blend together
Add water to 250ml
1/2 tsp Agar Agar powder
50g sugar
Cook till boil & sugar dissolve. Add “Egg Yolk”. Chill till set.
Skin Part:
1/2 Dragonfruit
Water fill to 500ml
1 tsp Agar Agar Powder
100g Sugar
Boil till sugar dissolve. Add filling. Chill till set.

Recipe:
1. Rinse and pat dry sweet potatoes 番薯冲水后擦干
2. Air fry at 180 degrees for 30 minutes 放进气炸锅调180度30分钟
No sugar sweet Rose Tea 无糖香甜玫瑰茶
(for 3 cups) Ingredient:
1 handful dried Rose bud (washed) 干玫瑰花 (洗净)
4-6 stevia leaves (washed) 甜菊叶 (洗净)
Method:
1. Preheat Thermal Flask by adding abit of hot water, leave for few minutes. 加烧水预热焖烧罐
2. Pour hot water away 烧水倒掉
2. Add Dried Rose bud and stevia leave 加干玫瑰花和甜菊叶
4. Fill 90% hot water 加水到9分满
3. Rest for 1 hour and ready to serve. 静置1小时就能饮用
P.S. Must drink water (like this rose tea) immediately after taking sweet potato to prevent constipation and indigestion.
吃了番薯记得要立刻喝水(如喝这个玫瑰茶),才不会消化不良和便秘。

今天是新加坡国庆日。为庆祝这个节日,特别准备了以红白色为主题的三明治当早餐。To celebrate National Day!
鲔鱼鸡蛋三明治
Tuna Egg Mayo Sandwich
For 3-4pax

Ingredients:
1 egg 鸡蛋1个
1 canned tuna mayonnaise 鲔鱼罐头1个
1 tbsp plain yogurt 原味优格1汤匙
Some black pepper 少许黑胡椒粉
Method:
(To make hard boiled egg)
1. Add a little hot water to Preheat thermal flask 加一点水预热焖烧罐
2. Pour away the hot water 把热水倒掉
3. Put egg in gently 小心地把蛋放进去
4. Fill water to 3/4 full 加水至7分满
5. Set timer:20 minutes 等20分钟
6. Add to ice water 立刻放入冰水里
7. Peel and mash to the size you want 用叉压至你要的大小
8. Add canned tuna mayo 加罐头鲔鱼搅拌均匀
Advantage: Canned tuna mayo already seasoned with onion etc so no need to add much seasoning 鲔鱼罐头已经很有味道,所以不用再加其他调味料
9. Add 1 tbsp plain yogurt 加原味优格
10. Mix well 搅拌均匀
11. Top bread with tomato and cucumber slices and add tuna egg mayo. Ready to serve.
Method:
(To make soft boil egg)
1. Add some salt to the left over thermal pot water 加一点盐在焖烧罐里
2. Gently put egg in 小心地把蛋放入
3. Remove egg after 20 minutes 20分钟后把蛋取出
4. Soak in ice water till cool 放入冰水里至冷却
Tips: cover with aluminium foil to speed up the cooling process 盖铝箔纸蛋会更快冷却
5. Soft boiled Egg is ready to eat 半熟蛋可以上桌了

(Not your usual) French Toast 家常西多士
(For 1 to 2 pax)

4 bread slice 4片面包
2 eggs 2粒蛋
1 tbsp soy sauce 1汤匙酱青
1 tbsp evaporated milk 1汤匙花奶
some pepper 胡椒粉少许
Method:
1. Add all seasoning to egg. Beat egg till even. 蛋里加调味料搅拌均匀
2. Dip bread in egg mixture. 面包两面沾蛋液
3. Heat wok and fry both sides till golden brown. 煎至两面金黄
4. Ready to serve. 可上桌

莲藕花生排骨汤 | Lotus root Peanut Soup Recipe

Ingredients:
1/4 - 1/2 lotus root (Steam for 30 minute first) 莲藕 (先蒸30分钟)
1 handful of peanut (Presoak and freeze) 花生 (泡水后冷冻)
1 handful of dried cuttlefish (washed and put in a teabag) 鱿鱼干/墨鱼干
2 dried scallops 干贝
1 honey date (washed) 蜜枣
1 ginger slice 姜片
Seasoning:
1 tbsp shao xing wine 绍兴酒
some salt and pepper to taste 盐和胡椒少许
Double boil for 3 hours. Serve when hot. 炖三小时。

Japanese Rice Lazy Bak Chang Recipe 珍珠米懒人肉粽食谱

Ingredients:
1 and half cup Japanese Rice
250g pork belly (I used soup meat as less oily and tender)
1/2 pkt roasted chestnut without shell
2 tbsp dried prawn (washed and soaked)
5-6 dried mushroom (washed and soaked)
3-4 salted egg yolk (optional)
Rice Seasoning:
1 and 1/2 cup mushroom water
1 tbsp dark soy sauce
2 tbsp oyster sauce
1 tsp five spice powder
1 tbsp shallot oil
(marinate rice in rice cooker)
Meat and Mushroom seasoning:
1 tbsp hua diao wine
1 tbsp dark soy sauce
1 tsp five spice powder
5-6 small rock sugar
(Marinate for 30 min, Cook for 20 min)
Method:
1. Fried dried prawn till fragrant. Add marinated meat and stir fry.
2. Add to rice cooker. Add chestnut and salted egg yolk.
3. Using traditional rice cooker, press "cook" mode. And let it cook till it turn "warm" mode.
4. Use rice bowl to form rice dumpling shape. Ready to serve.

Fried Yam Cake 炒芋头糕

1 Store bought Yam Cake
3 tbsp Rinsed Dried Radish (Cai Por)
2 Eggs
炒芋头粿
材料有:
1 x 现成芋头糕
3汤匙菜脯 (洗干净)
两粒鸡蛋
Method:
1. Yam cake cut into cubes 芋头糕切块
2. Heat oil fry yam cake till slight char 热油炒香芋头糕
3. Drizzle some fish sauce & continue frying 加一点鱼露继续炒香
4. Add minced garlic 爆香蒜茸
5. Add Cai Por 加菜脯继续爆香
6. Add egg 加鸡蛋
7. Set the egg by flatten the mixture 铺平让蛋液定型
8. Add more fish sauce 加鱼露
9. Add white pepper 加少许胡椒粉
10. Add Sweet Sauce 加甜酱
11. Add dark soy sauce 加黑酱油
12. Flip over 现在可翻面
13. Add more sweet sauce (for taste & Colour) 加甜酱 (要更黑更甜的话)
14. Add a pinch of sugar (to taste) 加少许糖 (要更甜的话)
15. Ready to serve 很香! 可上桌了!
16. Garnish with spring onion 加葱花或葱段点缀

This HK fried noodle is a simple breakfast in HK, just like economic noodle or beehoon in Singapore.
Each time I go HK, I will have this for breakfast.
Not all eatery in HK serve nice fried noodle, some are just tasteless.
So when I crave for it, I will cook this for breakfast or even have it for lunch and sometimes dinner.
This is a foolproof recipe. Do give it a try and you will love it.

Hong Kong Fried Noodle 香港炒面

Ingredients:
1 block of fine noodle
3 handful of bean sprouts
1 tbsp mince garlic
1 tbsp of Soy Sauce
1 tbsp of Oyster Sauce
1 tsp sugar
1 tsp dark soy sauce
some sesame oil and pepper
Method:
1. Add noodle to boiling water 水滚后加面 (这份量可吃两大碗)
2. Cook for about 4 minutes till soft 煮约4分钟至软
3. Remove from heat 捞起备用
4. Heat oil add minced garlic 热油后加入蒜末炒香
5. Add bean sprouts 加豆芽继续炒
6. Add oyster sauce 加1 汤匙蚝油
7. Add soy sauce 加1 汤匙酱青
8. Add noodle and stir fried evenly 加面炒匀
9. Add dark soy sauce & 2 tbsp water 加1茶匙黑酱油和2汤匙水
10. Add about 1 tsp sugar 加一茶匙糖
11. Add some sesame oil 加点麻油
12. Add some pepper 加少许胡椒粉
13. Stir well and ready to serve 炒均匀后就可上桌
P.S. This version is without leek. Good for those who don't like spring onion, coriander, leek etc.
You can also add other veggie or mushroom if you want 你也可以加其他蔬菜和菇类
