今年的生肖年是牛年,所以试做牛纹面包(手法不熟练,请包涵)
This year zodiac animal is Ox, so trying to bake cow print bread for the first time (pardon my skill)
(Yield 1 loaf, adapted recipe from here)
Ingredients 材料:
200g 温牛奶 (40-45度)warm milk
3g 酵母 yeast
110g 全麦粉 wholemeal Flour
190g 面包粉 bread Flour
(如没全麦粉,可用300g面包粉 if no wholemeal flour, can just use 300g bread flour)
3g 盐 Salt
35g 细砂糖 sugar
15g 牛油 butter
1 tbsp (15g) 黑可可粉 dark chocolate powder
Method做法:
1. 酵母加进温牛奶 Add yeast to warm milk
2. 加少许糖入牛奶激活酵母 add some sugar to activate yeast
3. 干湿材料混合并揉面 mix wet and dry ingredients and knead
4. 发酵两小时 proof for 2 hours
5. 面团分成两半 divide dough into 2
6. 加黑可可粉入其一 add chocolate powder to 1 portion
7. 再发酵1小时 proof for 1 hour
8. 分成几份 divide into few portions
9. 把黑面团放在白面团内,揉成长条 wrap dark portion with white portion and roll
10. 再发酵1小时 proof for 1 hour
11. 放入170度预热烤箱烤30分钟 bake in 170 degree preheated oven for 30 minutes
